  • Yellow Onion (1 medium): Thinly sliced or diced to melt into the braising liquid.
  • Garlic (4 cloves): Minced fresh for fragrance.
  • Low-Sodium Chicken Broth (1/2 cup): Cabbage releases a tremendous amount of natural moisture as it cooks, so only a modest splash of liquid is required to get the braise going.
  • Apple Cider Vinegar (2 tablespoons): Cuts through the richness of the rendered bacon fat and brightens the overall flavor profile.
  • Unsalted Butter (2 tablespoons, cut into pats): Adds a velvety sheen and buttery body to the finishing broth.
  • Kosher Salt (1 teaspoon, plus more to taste): Bacon contributes salt, so start conservative.
  • Freshly Cracked Black Pepper (1 teaspoon): Coarse ground pepper provides a necessary bite.

Instructions

Step 1: Crisp the Bacon and Render the Fat

  1. Place a large skillet over medium heat intensity . Add the chopped bacon pieces and cook, stirring occasionally, for 6 to 8 minutes until browned and lightly crisped around the edges.
  2. Using a slotted spoon, transfer about two-thirds of the cooked bacon to a paper-towel-lined plate and set aside in the refrigerator (this portion will be stirred in at the very end to keep a crunchy texture). Leave the remaining one-third of the bacon and all of the rendered bacon grease in the skillet.

Step 2: Sauté the Aromatics

  1. Return the skillet with the bacon fat to medium-low heat intensity . Add the sliced yellow onion. Cook for 3 to 4 minutes until translucent and soft, scraping up any browned bacon bits (fond) stuck to the bottom of the pan. Stir in the minced garlic and cook for an additional 60 seconds until fragrant, taking care not to scorch the garlic. Remove the pan from heat.

Step 3: Prep and Layer the Cabbage

  1. Discard any damaged or loose outer leaves from the head of cabbage. Cut the head into quarters and slice out the tough triangular core from each section. Chop the quarters into bite-sized chunks (roughly 1.5 to 2 inches square).
  2. Place half of the chopped cabbage into the bottom of a 6-quart slow cooker. Pour over half of the sautéed onion, garlic, and bacon fat mixture. Sprinkle with half of the salt, black pepper, smoked paprika, and crushed red pepper flakes. Repeat with the remaining cabbage, the rest of the onion mixture, and remaining seasonings.

Step 4: Add Broth and Butter

  1. Pour the 1/2 cup of low-sodium chicken broth and 2 tablespoons of apple cider vinegar around the edges of the slow cooker insert. Dot the top of the cabbage with the 2 tablespoons of butter pats. (Note: The slow cooker will look quite full, but the cabbage will reduce to nearly half its volume as it wilts.)

Step 5: Choose Your Slow Cooker Intensity & Cook

  1. Secure the lid tightly on the slow cooker:

  3. High Intensity Cooking (Time-Saver): Cook on HIGH for 3 to 4 hours . Check at the 3-hour mark; the cabbage should be fully tender when pierced with a fork.
  4. Stir gently once halfway through cooking if you are home, though it is not strictly required.

Step 6: Finish and Garnish

  1. Once the cabbage reaches your desired tenderness, remove the lid. Give everything a thorough toss to coat all the cabbage ribbons in the rich pan juices. Stir in the reserved crisp bacon pieces from Step 1. Taste and adjust seasoning with an extra pinch of kosher salt, black pepper, or a small dash of apple cider vinegar if extra acidity is desired. Serve hot straight from the crock.
