The Sausage & Molten Cheese Core
- 6 quality smoked sausages (such as uncured beef franks, smoked Polish kielbasa, or bratwurst)
- 6 sticks (approx. 6 oz / 170g) low-moisture whole milk mozzarella string cheese (or sharp cheddar blocks cut to match sausage thickness)
The Grain-Free “Cornbread” Fathead Dough
- 2 cups (8 oz / 225g) low-moisture part-skim mozzarella cheese, freshly shredded
- 2 tbsp (1 oz / 30g) full-fat cream cheese
- 1 ½ cups (145g) superfine blanched almond flour
- 1 large egg , room temperature, lightly beaten
- 1 tsp aluminum-free baking powder
- 1 tbsp (12g) granular allulose or monk fruit sweetener (replicates classic sweet cornbread batter)
- ½ to 1 tsp sweet corn extract / flavoring (the secret ingredient for true cornmeal aroma)
- ½ tsp fine sea salt
- ½ tsp garlic powder

- 2 tbsp (30g) unsalted butter, melted
- ¼ tsp smoked paprika or turmeric (for deep golden-yellow cornbread color)
- Yellow mustard and sugar-free ketchup (for serving)

Instructions
- Pat the sausages and mozzarella sticks dry with paper towels; any exterior moisture will cause the dough to slip off during cooking. Cut sausages in half crosswise, and cut mozzarella sticks to equal lengths. Thread a piece of sausage and a piece of cheese consecutively onto each wooden skewer (creating a half-sausage, half-cheese core). Place the assembled skewers in the freezer for 10 minutes to firm up the cheese so it does not burst prematurely.
- In a large microwave-safe bowl, combine the 2 cups of shredded mozzarella and 2 tablespoons of cream cheese. Microwave on HIGH in 30-second bursts, stirring between each, until completely melted and smooth.
- Immediately add the almond flour, beaten egg, baking powder, granular sweetener, sweet corn extract, sea salt, and garlic powder to the hot melted cheese. Mix vigorously with a silicone spatula until a dough begins to form. Lightly oil your hands and knead the dough for 1 to 2 minutes until smooth and uniform. If the cheese stiffens before incorporating, reheat for 10 seconds.
- Divide the dough into 6 equal balls (approx. 65g each). Roll each ball between two sheets of parchment paper into an oval roughly ¼-inch thick. Place a chilled sausage-cheese skewer in the center. Fold the dough over the skewer, pinching the top, bottom, and seams tightly around the stick to seal completely. Roll gently between your palms to smooth out the surface into a classic corn dog shape.
- Whisk together the 2 tablespoons of melted butter and pinch of smoked paprika. Brush the exterior of each wrapped corn dog evenly with the butter mixture.
- Air Fryer Method (Recommended): Preheat air fryer to 360°F (182°C). Place the dogs in the basket in a single layer, ensuring they do not touch. Air fry for 6 minutes, carefully flip with silicone tongs, and air fry for an additional 4 to 6 minutes until deeply golden and crisp.
- Oven Method: Place on a parchment-lined baking sheet and bake at 375°F (190°C) for 15 to 18 minutes, rotating once, until golden-brown and firm.
- Transfer the hot corn dogs to a cooling rack. Let them rest for 3 to 5 minutes so the molten cheese sets slightly, preventing it from leaking out when you take your first bite. Serve warm with classic yellow mustard or sugar-free ketchup.
