Ingredients

Main Ingredients

  • 600 g cooked chicken breast or boneless chicken thighs
  • 4 large eggs
  • 100 g bacon
  • 4 tablespoons mayonnaise
  • 1 tablespoon butter or beef tallow
  • 40 g Parmesan cheese, finely grated
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, optional

Optional Ingredients

  • 2 tablespoons heavy cream
  • 30–50 g cheddar cheese, finely chopped
  • 1 additional boiled egg
  • Extra crispy bacon
  • A small amount of pork rind crumbs for crunch

Instructions

Step 1: Cook the Chicken

  1. If using raw chicken, season it lightly with salt.
  2. Heat butter or beef tallow in a skillet over medium heat. Add the chicken and cook until golden on the outside and completely cooked through.
  3. The chicken should reach an internal temperature of 74°C / 165°F .
  4. Allow it to cool for several minutes, then shred or chop it into bite-sized pieces.

Step 2: Prepare the Eggs

  1. Place the eggs in a saucepan and cover them with water.
  2. Bring the water to a boil and cook the eggs for approximately 9–11 minutes .
  3. Transfer them immediately to cold water. Once cooled, peel and chop the eggs.

Step 3: Cook the Bacon

  1. Place the bacon in a skillet over medium heat.
  2. Cook until crispy, turning occasionally.
  3. Transfer it to a paper towel to remove excess grease, then chop it into small pieces.
  4. Reserve a little bacon fat if desired.

Step 4: Prepare the Dressing

  1. In a large bowl, combine:
  2. Mayonnaise
  3. Melted butter or tallow
  4. Parmesan
  5. Heavy cream, if using
  6. Salt
  7. Black pepper, if using
  8. Mix until smooth and creamy.

Step 5: Combine

  1. Add the chopped chicken, eggs, and crispy bacon to the bowl.
  2. Gently fold everything together until the chicken is evenly coated with the creamy dressing.
  3. Don’t overmix—the eggs should remain in small pieces rather than becoming completely mashed.

Step 6: Chill

  1. Cover the bowl and refrigerate for 30–60 minutes .
  2. This allows the flavors to develop and gives the salad a thicker, creamier texture.
