Step 1: Prepare the Filling
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 4-5 minutes until softened and translucent. Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook, breaking it up with a spoon, until it is browned and cooked through, about 5-7 minutes. Drain off any excess fat.
- Reduce the heat back to medium. Stir in the oregano, paprika, salt, and pepper. Add the tomato paste and Worcestershire sauce, stirring constantly for one minute to coat the meat and cook out the raw taste of the tomato paste. Remove from heat and stir in the fresh parsley. Step 2: Assemble the Pastry

Step 3: Create the Crust and Bake
- Fold the bare edges of the pastry over the filling, creating a rustic, rectangular crust. Press the corners gently to seal. Using a pastry brush, generously brush the exposed pastry crust with the beaten egg wash. This will give it a beautiful, golden-brown shine when baked. Sprinkle with sesame or poppy seeds, if using.
Step 4: Bake to Perfection
- Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the pastry is puffed up, deep golden brown, and flaky, and the cheese is melted and bubbly.
