Equipment

  • Slow Cooker / Crock-Pot: 6-quart capacity or larger.
  • Hand Mixer or Two Forks: For shredding the chicken smoothly.
  • Skillet: For frying bacon (unless using pre-cooked bacon).
  • Measuring Spoons & Cups

Ingredients

Main Components:

  • Chicken: 2 lbs (approx. 900g) boneless, skinless chicken breasts (or chicken thighs for extra juiciness).
  • Cream Cheese: 16 oz (2 blocks / 450g) full-fat cream cheese, softened at room temperature.
  • Ranch Seasoning: 1 packet (1 oz / 28g) dry Ranch seasoning mix (e.g., Hidden Valley).
  • Cheddar Cheese: 2 cups (200g) sharp cheddar cheese, freshly shredded.
  • Bacon: 8 to 10 strips thick-cut bacon, cooked crisp and chopped into bite-sized pieces.

Optional Mix-Ins & Garnishes:

  • Green Onions: 1/2 cup finely sliced scallions for fresh flavor and color contrast.
  • Garlic Powder: 1/2 tsp for extra depth.
  • Red Pepper Flakes or Jalapeños: 1/4 tsp for a kick of heat.
  • Black Pepper: 1/4 tsp ground black pepper.

Heat Intensities & Cooking Profiles

  • Low Setting (170°F–200°F / 77°C–93°C): Recommended. Cooking on Low over 6–7 hours allows collagen and fibers in the chicken breast to break down gently. The cream cheese melts evenly without separating or curdling.
  • High Setting (200°F–300°F / 93°C–148°C): Use if pressed for time (3–4 hours). Keep the lid closed to trap ambient steam; stir thoroughly upon shredding to emulsify the dairy components smoothly.

Instructions

Step 1: Prepare the Slow Cooker Base

  1. Lightly spray the interior of your 6-quart slow cooker insert with non-stick cooking spray or line with a slow cooker liner for effortless cleanup. Place the whole boneless, skinless chicken breasts in a single layer along the bottom of the pot.

Step 2: Season and Top

  1. Evenly sprinkle the dry Ranch seasoning packet, black pepper, and optional garlic powder over the chicken breasts. Place the softened blocks of cream cheese directly on top of the seasoned chicken. Do not add water or extra liquid; the chicken will release natural juices during the cooking process to create a rich emulsion.

Step 3: Set Time & Heat Intensity

  1. Cover with the lid and select your preferred heat setting:
  2. Optimal Texture: Set to LOW for 6 to 7 hours .
  3. Quick Option: Set to HIGH for 3 to 4 hours .
  4. Note: Avoid opening the lid during the first 4 hours to prevent heat and steam loss.

Step 4: Shred the Chicken

  1. Once the internal temperature of the chicken reaches 165°F (74°C) and shreds easily with a fork, turn the slow cooker to the WARM setting. Use two large forks or a hand mixer on low speed directly in the slow cooker bowl to shred the chicken into uniform, pulled pieces. Stir vigorously to fully incorporate the melted cream cheese into the chicken juices.

Step 5: Add Cheddar & Bacon

  1. Fold in 1.5 cups of shredded sharp cheddar cheese and two-thirds of the chopped crisp bacon . Stir well until the cheese melts into a creamy, velvety sauce wrapping around every piece of chicken.
  2. Top with the remaining 1/2 cup of cheddar cheese and remaining bacon bits . Cover with the lid for 5 to 10 minutes until the top cheese layer is completely melted.

Step 6: Garnish & Serve

  1. Garnish with sliced green onions and serve warm!
