- 1.5 lbs (680g) fresh salmon fillets (skin removed, cut into 1-inch uniform cubes)
- 1 tbsp olive oil or avocado oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried oregano
- ½ tsp fine sea salt
- ¼ tsp freshly cracked black pepper
For the Garlic Butter Glaze
- 2 tbsp unsalted butter , melted
- 2 cloves garlic , finely minced
- 1 tbsp fresh lemon juice
- 1 tbsp fresh parsley , finely chopped (for garnish)

- Pat the salmon fillets completely dry using paper towels. Moisture is the enemy of a golden crust. Cut the salmon into uniform 1-inch bite-sized cubes so they cook evenly.
- Place the cubed salmon in a large mixing bowl. Drizzle with olive oil. In a small ramekin, combine smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper. Sprinkle the spice mix evenly over the salmon and gently toss until every piece is well coated.
- Preheat your air fryer to 400°F (200°C). Arrange the salmon bites in a single layer in the basket, ensuring they are not overcrowded (cook in two batches if necessary). Air fry for 8 to 10 minutes, shaking the basket halfway through, until the edges are crispy and golden brown.
- While the salmon cooks, whisk together the melted butter, minced garlic, and lemon juice in a small bowl. Transfer the hot salmon bites to a serving dish, pour the garlic lemon butter over them, and toss gently. Garnish with fresh chopped parsley and lemon wedges.
