Step 1: Prepare the Vegetables
- Wash all produce thoroughly. Remove any wilted outer leaves from the cabbage head, cut it into quarters, slice out the tough inner core, and chop the rest into bite-sized strips or squares.
- Slice both yellow and red onions into thin half-moons.
- Slice the carrots, celery, and mince the garlic.
Step 2: Sauté the Aromatics (Flavor Booster Step)
- Note: This step is optional but highly recommended to unlock deep onion flavor.
- Heat 2 tbsp of olive oil in a large skillet over medium-high heat.
- Add the sliced onions, celery, and carrots. Sauté for about 5 to 6 minutes, stirring frequently, until the onions soften and start turning golden brown at the edges.
- Add the minced garlic, Italian seasoning, smoked paprika, and red pepper flakes. Stir continuously for 1 minute until fragrant.
- Transfer the sautéed vegetables into your 6-quart or larger slow cooker.
Step 3: Layer and Load the Slow Cooker
- Place the chopped green cabbage into the slow cooker over the sautéed base.
- Pour in the diced tomatoes (with juices) and 6 cups of broth .
- Add the bay leaf , salt , and black pepper .
- Stir gently to integrate all ingredients. The cabbage will fill the pot high at first, but it will reduce dramatically in volume as it cooks down.
Step 4: Slow Cook to Perfection
- Cover with the lid and set your slow cooker: LOW Intensity: 7 to 8 hours (Best for deep flavor development)
- HIGH Intensity: 3.5 to 4 hours (Best when you need dinner faster)
- The soup is done when the cabbage is completely tender and translucent, and the broth turns rich and aromatic.
Step 5: Final Adjustments and Serving
- Remove and discard the bay leaf.
- Stir in 1 tbsp of apple cider vinegar right before serving. This cuts through the richness and lifts all the savory elements.
- Taste the broth carefully and adjust with additional salt or pepper if desired.
- Ladle into warm bowls, garnish with fresh parsley or grated Parmesan, and serve alongside crusty bread.
