Ingredients

  • 2 lbs Yukon Gold or Russet potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  1. Peel the potatoes.
  2. Cut the potatoes into ¼-inch-thick slices using a sharp knife or mandolin.
  3. Put the potato slices into a medium bowl and cover them with cold water.
  4. Let the potatoes soak for 15–30 minutes . This helps remove some starch and makes the potatoes crispier.
  5. Drain the potatoes well and dry them thoroughly with paper towels.
  6. Put the dry potato slices back into the bowl.
  7. Add the olive oil, kosher salt, paprika, garlic powder, and onion powder.
  8. Mix well until all the potato slices are evenly coated with the oil and seasoning.
  9. Place half of the potato slices in the bottom of a 7-quart or larger basket-style air fryer . Keep them mostly in one layer.
  10. Air fry at 380°F for 12–15 minutes .
  11. Shake the air fryer basket about every 5 minutes so the slices cook evenly.
  12. Check the potatoes after 12 minutes. They should be golden and crisp outside and soft inside.
  13. Remove the cooked potatoes and place them on a platter or baking sheet.
  14. Repeat with the remaining potato slices.
  15. Serve immediately with dill aioli or your favorite dipping sauce.
