Step 1: Smash the Cucumbers (Medium intensity)

  1. Wash cucumbers well. Cut off the ends. Place a cucumber on a cutting board. Lay the flat side of a large chef’s knife or a rolling pin over it. Whack firmly — you want the cucumber to split open and crack into irregular chunks. Don’t pulverize it; just crack into 1-inch pieces. Repeat with all cucumbers.
