Instructions
Step 1: Prep Your Workspace and Oven
- Preheat your oven to 375°F (190°C) . Take a 9×13-inch baking dish (or a similarly sized deep casserole dish) and generously grease it with butter or non-stick cooking spray to prevent the potatoes from sticking.
Step 2: Slice the Potatoes
- Wash, peel, and slice your potatoes. For the best texture, aim for uniform slices about 1/8-inch thick. Using a mandoline slicer makes this quick and ensures even cooking times throughout the entire casserole. Tip: Keep sliced potatoes submerged in a bowl of cold water if you are prepping them ahead of time to prevent browning, but make sure to pat them completely dry with paper towels before layering.
Step 3: Build the Creamy Garlic Sauce
- Place a large saucepan or skillet over medium heat and melt the 2 tablespoons of butter .
- Add the diced onion and sauté for 3 to 4 minutes until translucent and soft.
- Stir in the minced garlic and cook for about 1 minute until fragrant, being careful not to let it burn.
- Sprinkle the all-purpose flour evenly over the onion and garlic mixture. Whisk continuously for about 1 to 2 minutes to cook out the raw flour taste, creating a smooth paste (roux).
- Slowly pour in the whole milk and heavy cream while whisking vigorously to prevent any lumps from forming.
- Bring the mixture to a gentle simmer, stirring frequently, until it thickens slightly (about 4 to 5 minutes).
- Season the sauce with salt , black pepper , grated nutmeg , and chopped thyme . Remove the pan from the heat.
Step 4: Layer the Casserole
- Arrange about one-third of your sliced potatoes evenly across the bottom of your prepared 9×13-inch baking dish, overlapping them slightly.
- Ladle about one-third of your warm cream sauce evenly over the potato layer, making sure the sauce drips down between the slices.
- Sprinkle a generous handful of your mixed cheeses (sharp cheddar and Gruyère) over the sauce.
- Repeat this layering process two more times: second layer of potatoes, sauce, and cheese; then finish with a final top layer of remaining potatoes and the remaining cream sauce. Save the bulk of your cheese blend for the final baking stage.
Step 5: Bake to Golden Perfection
- Cover the baking dish tightly with aluminum foil (spray the underside of the foil lightly with cooking spray so the cheese doesn’t stick to it).
- Bake in the preheated oven at 375°F (190°C) for 45 minutes . This covered baking time ensures the potatoes cook all the way through and become fork-tender without the top burning.
- Carefully remove the foil and scatter the remaining shredded cheddar and Gruyère cheese evenly across the top of the casserole.
- Return the uncovered dish to the oven for an additional 20 to 25 minutes , or until the potatoes are completely tender when poked with a knife, the sauce is bubbling fiercely around the edges, and the top cheese crust is melted, golden brown, and slightly crisp.
Step 6: Rest and Serve
- Remove the potato bake from the oven and let it rest uncovered for 10 to 15 minutes before slicing and serving. This crucial resting period allows the rich cream sauce to set and thicken up, making it much easier to scoop neat portions onto plates. Garnish with freshly chopped parsley for a pop of color and freshness.
