Instructions

Phase 1: Preparing & Baking the Meatloaf (Intensity: Medium | Time: 1 hour 15 mins)

  1. Preheat & Prep: Preheat your oven to 375°F (190°C) . Line a rimmed baking sheet with foil and lightly spray with cooking oil, or prepare a 9×5-inch loaf pan.
  2. Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add diced onions and minced garlic. Sauté for 5–7 minutes until translucent and aromatic. Remove from heat and allow to cool slightly.
  3. Soak the Panade: In a large bowl, mix the Panko breadcrumbs and milk together. Let sit for 5 minutes until a wet paste (panade) forms. This ensures your meatloaf stays tender and moist without becoming dry or crumbly.
  4. Combine Meatloaf Base: To the breadcrumb mixture, add beaten eggs, Worcestershire sauce, tomato paste, dried oregano, smoked paprika, salt, black pepper, parsley, and the cooled sautéed onion mixture. Whisk well to combine.
  5. Mix Gently: Add ground beef and ground pork. Using clean hands or a fork, gently fold the ingredients together until just combined. Do not overmix , as overworking ground meat results in a dense, tough meatloaf.
  6. Shape: Transfer the meat mixture onto the prepared baking sheet and shape into a compact 9×5-inch block, or press loosely into a loaf pan.
  7. Whisk the Glaze: In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, Dijon mustard, and garlic powder. Brush half of the glaze evenly over the top and sides of the meatloaf.
  8. Bake: Place in the preheated oven for 45 minutes . Remove, brush with the remaining half of the glaze, and return to the oven for another 15–20 minutes , or until an internal thermometer inserted into the center reads 160°F (71°C) .
  9. Rest: Remove from the oven and let rest for 15 minutes before slicing. Resting allows juices to redistribute so the loaf holds its shape perfectly.

Phase 2: Whipping the Mashed Potatoes (Intensity: Low-Medium | Time: 25 mins)

  1. Boil Potatoes: Place cubed potatoes in a large pot and cover with cold water by at least 1 inch. Add 1 tablespoon of salt. Bring to a boil over high heat, then reduce to medium-high and simmer for 15–20 minutes until tender (a fork should pierce through effortlessly).
  2. Drain & Dry: Drain the potatoes completely in a colander. Return them to the warm pot off the heat for 1–2 minutes to allow excess surface moisture to evaporate.
  3. Mash & Cream: Mash potatoes using a potato masher or ricer until smooth. Add melted butter, softened cream cheese, minced garlic, warm heavy cream, salt, and pepper. Fold gently until rich, creamy, and velvety. Cover with a lid to keep warm.

Phase 3: Crafting the Rich Brown Gravy (Intensity: Medium | Time: 10 mins)

  1. Roux Base: Melt butter in a saucepan over medium heat. Sprinkle in the all-purpose flour. Whisk continuously for 2–3 minutes until the roux turns a warm golden brown color and smells nutty.
  2. Whisk in Liquid: Slowly pour in warm beef broth while whisking vigorously to prevent lumps.
  3. Simmer & Season: Stir in Worcestershire sauce and onion powder. Bring to a simmer over medium-high heat, then reduce heat to low. Simmer for 3–5 minutes until the gravy thickens enough to coat the back of a spoon. Season with salt and freshly cracked black pepper to taste.
