Prep time15 minutes
Cook time35 minutes
Total time1 hour 20 minutes
ServingsApproximately 1 ½ cups (360 ml)

Equipment

  • Medium Stainless Steel Saucepan (Avoid unlined aluminum or iron, as reactive metals can discolor the bright red beet pigments)
  • Box Grater or High-Speed Food Processor
  • Fine Mesh Strainer
  • Cheesecloth or Nut Milk Bag (for ultra-clear syrup)
  • Measuring Cups and Spoons
  • Vegetable Peeler
  • Glass Sterilized Bottle or Mason Jar (with an airtight seal)

Ingredients

Primary Base

  • 2 large Fresh Red Beets (Approx. 350g to 400g / ¾ lb) – Peeled and coarsely grated
  • 1 ½ cups (360 ml) Filtered Water
  • 1 cup (200g) Granulated White Sugar (or Pure Cane Sugar for a warm molasses undertone)

Flavor Enhancers & Preservatives

  • 1 tablespoon Freshly Squeezed Lemon Juice (Citric acid brightens the flavor and stabilizes the vibrant crimson color)
  • 1 small Strip of Fresh Lemon Peel (Pith removed)
  • 1 pinch Fine Sea Salt (Balances and enhances natural sweetness)

Optional Aromatic Infusions (Pick One or Two)

  • 1 thin slice Fresh Ginger (for a spicy kick)
  • 1 small Cinnamon Stick (for warm winter notes)
  • 2–3 Fresh Mint Leaves (steeped during cooling for a refreshing herbal note)

Instructions

Step 1: Prep the Beets (Low Intensity)

  1. Wash the raw beets thoroughly under cold running water to remove any dirt or soil.
  2. Using a vegetable peeler, strip away the outer skin completely.
  3. Coarsely grate the peeled beets using the large holes of a box grater or the shredding disc attachment of a food processor. Chef’s Note: Wearing kitchen gloves during this step prevents temporary beet staining on your hands and nails.

Step 2: Extract the Flavor & Juice (Medium Intensity)

  1. In a medium stainless steel saucepan, combine the grated beets, 1 ½ cups of filtered water , the lemon peel strip , and any optional aromatics (like ginger or cinnamon).
  2. Set the pan over medium-high heat and bring the liquid to a rolling boil.
  3. Once boiling, reduce the heat to low, cover the pan with a lid, and let it simmer gently for 20 minutes . The grated beets will release their rich juice, flavor, and deep ruby pigments into the water.

Step 3: Strain the Pure Beet Extract (Low Intensity)

  1. Remove the saucepan from the heat. Line a fine-mesh strainer with a double layer of cheesecloth and place it over a heat-safe bowl or liquid measuring cup.
  2. Pour the hot beet mixture through the cheesecloth-lined strainer.
  3. Allow it to drain naturally for 5 minutes. Gather the corners of the cheesecloth and gently squeeze out all remaining liquid from the beet pulp.
  4. Measure the extracted beet liquid. You should have roughly 1 cup (240 ml) of deep red beet juice. Discard or compost the remaining solid beet pulp.

Step 4: Simmer into Syrup (Medium-Low Intensity)

  1. Rinse out your saucepan and pour the strained beet extract back into it.
  2. Add the 1 cup of granulated sugar , 1 tablespoon of fresh lemon juice , and the pinch of sea salt .
  3. Place the pan over medium heat and stir continuously with a wooden spoon or spatula until the sugar dissolves completely (about 2 to 3 minutes).
  4. Reduce the heat to medium-low to maintain a gentle, low simmer. Do not let it come to a hard boil, as high temperatures can ruin the fresh flavor and dull the vivid red color.
  5. Simmer uncovered for 10 to 12 minutes , stirring occasionally, until the liquid reduces slightly and coats the back of a spoon with a glossy sheen. (Keep in mind that the syrup will thicken significantly as it cools).

Step 5: Cool, Bottle, and Store

  1. Turn off the heat and let the syrup rest in the pan for 30 minutes to drop to room temperature.
  2. Pour the cooled beetroot syrup into a sterilized glass bottle or airtight jar.
  3. Seal tightly and store in the refrigerator.
