Instructions

Step 1: Cook the Ground Turkey

  1. Heat ½ tablespoon of olive oil in a large 12-inch skillet over medium-high heat .
  2. Add the ground turkey to the hot pan. Use a wooden spoon or spatula to break the meat into small bite-sized crumbles.
  3. Season with ¼ teaspoon salt and ¼ teaspoon black pepper .
  4. Cook for 6 to 8 minutes , stirring occasionally, until the turkey is fully browned and no pink remains (internal temperature reaches 165°F / 74°C).
  5. Transfer the cooked turkey to a clean plate and set aside, leaving any savory juices in the pan.

Step 2: Sauté Onions & Garlic

  1. Turn the heat down to medium . Add the remaining ½ tablespoon of olive oil to the same skillet.
  2. Add the diced yellow onion and cook for 3 to 4 minutes until soft and translucent.
  3. Stir in the minced garlic and cook for 30 seconds to 1 minute until fragrant, being careful not to let the garlic burn.

Step 3: Steam & Soften Sweet Potatoes

  1. Add the diced sweet potatoes , red bell pepper , and green bell pepper to the skillet.
  2. Pour in the spice blend (chili powder, cumin, smoked paprika, garlic powder, onion powder, remaining salt, and red pepper flakes if using). Stir well to evenly coat all ingredients in the oil and spices.
  3. Pour in ⅓ cup low-sodium chicken broth . Immediately cover the skillet with a tight-fitting lid and reduce heat to medium-low .
  4. Simmer covered for 10 to 12 minutes , stirring halfway through, until the sweet potatoes are fork-tender and the liquid has mostly absorbed.

Step 4: Combine, Add Greens & Serve

  1. Remove the lid and turn the heat to low . Return the cooked ground turkey (and any accumulated juices) to the skillet with the sweet potatoes.
  2. Add the fresh baby spinach . Gently fold all ingredients together for 2 to 3 minutes until the turkey is heated through and the spinach is completely wilted.
  3. Optional Cheesy Finish: Sprinkle shredded cheese evenly over the top. Turn off the heat, cover the pan for 2 minutes until melted.
  4. Garnish with freshly chopped cilantro or green onions, and squeeze fresh lime juice over the skillet right before serving.
