A very low-intensity recipe for making 4 small, zero-carb tortillas using just eggs and cheese. The key technique is pouring and swirling the batter into a thin, even layer in a non-stick pan.

Prep time5 minutes
Cook time8–10 minutes (per batch)
Total time15 minutes
Servings4 small tortillas (6-inch)

Equipment

  • Medium mixing bowl
  • Whisk or fork
  • Non-stick skillet (8-inch or 10-inch)
  • Rubber spatula
  • Measuring cup (optional)

Ingredients

  • 2 large eggs (pasture-raised if possible)
  • 1 cup (about 2 ounces / 55g) shredded cheese

Instructions

  1. Crack the 2 large eggs into a mixing bowl and whisk vigorously until fully combined and slightly frothy (about 30 seconds).
  2. Add the shredded cheese and stir with a spatula or fork until evenly coated with egg. If the mixture seems too thick, add 1 teaspoon of water and stir again.
  3. Place a non-stick skillet over medium heat and let it warm up for about 1 minute until a drop of water sizzles and evaporates immediately. Do not add oil or butter.
  4. Pour about ¼ of the batter (roughly 3 tablespoons) into the center of the hot pan and immediately spread it into a thin, even circle about 6 inches wide using the back of a spoon or measuring cup.
  5. Let the tortilla cook undisturbed for 1½ to 2 minutes until the edges are golden brown, the top is mostly set, and a spatula slides easily underneath.
  6. Flip the tortilla and cook the second side for 45 seconds to 1 minute, pressing down gently with the spatula if needed for even browning.
  7. Slide the finished tortilla onto a wire rack or paper towel. Let it cool for about 1 minute before stacking. Repeat with the remaining batter to make 4 tortillas.

Notes

Avoid pre-shredded cheeses with anti-caking agents; grate your own for the best melt. For larger 8-inch tortillas, use 3 eggs and 1½ cups shredded cheese, increasing first-side cook time to 2–2½ minutes. Store in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat in a dry skillet for 20 seconds per side or microwave between damp paper towels for 15 seconds.
