Instructions
Step 1: Prep the Oven and Pan
- Preheat your oven to $350^\circ\text{F}$ ( $175^\circ\text{C}$ ) with the baking rack set in the center.
- Lightly grease an 8-inch springform pan with coconut oil or baking spray, and line the bottom with a circle of parchment paper for easy release.
Step 2: Combine Dry Ingredients
- In a large bowl, whisk together the almond flour , tapioca starch , baking powder , baking soda , and salt until well blended and free of clumps.
Step 3: Mix the Wet Ingredients & Lemon Infusion
- In a second large mixing bowl, whisk the 3 eggs and honey together until slightly pale and frothy (about 1 minute).
- Whisk in the Greek yogurt , melted coconut oil , fresh lemon juice , lemon zest , and vanilla extract until smooth and fully incorporated.
Step 4: Fold and Assemble
- Pour the dry ingredients into the bowl with the wet mixture.
- Using a rubber spatula, gently fold the batter together just until mixed. Almond flour batter is forgiving, but gentle folding maintains a tender crumb structure.
- Pour the batter into the prepared cake pan and smooth the top evenly with your spatula.
Step 5: Bake to Perfection
- Bake at $350^\circ\text{F}$ ( $175^\circ\text{C}$ ) for 45 to 50 minutes .
- Check for doneness around the 40-minute mark: the top should be golden brown, the edges set, and a toothpick inserted into the center should come out clean. If the top browns too quickly before the center sets, tent loosely with aluminum foil for the final 10 minutes.
Step 6: Cool and Glaze
- Remove the cake from the oven and let it cool in the pan on a wire rack for 20 to 30 minutes .
- Run a butter knife around the edge of the pan to loosen, then release the springform ring.
- If using the glaze, whisk the powdered sugar and lemon juice together in a small bowl until smooth, then drizzle over the fully cooled cake.
