Instructions

Step 1: Prep the Oven & Equipment

  1. Preheat your oven to 425°F (220°C) .
  2. Line a large baking sheet with parchment paper. For maximum crispiness, place an oven-safe wire cooling rack directly on top of the baking sheet and light grease with cooking spray.

Step 2: Prepare the Cauliflower

  1. Trim the leaves and tough central stem from the head of cauliflower.
  2. Cut into uniform, bite-sized florets. Keeping them roughly equal in size ensures even cooking throughout. Dry thoroughly with paper towels.

Step 3: Create the Batter & Panko Station

  1. Batter Bowl: In a bowl, whisk together the all-purpose flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, black pepper, and milk until a smooth, batter forms (similar to pancake batter consistency).
  2. Panko Bowl: Place the Panko breadcrumbs in a separate shallow dish or bowl.

Step 4: Batter & Bread the Florets

  1. Dip a handful of cauliflower florets into the wet batter, making sure each piece is completely coated. Shake off excess batter.
  2. Transfer the battered florets into the Panko breadcrumbs. Press gently so the breadcrumbs adhere firmly to all sides.
  3. Arrange the coated florets in a single layer on the prepared baking rack or sheet, ensuring space between each piece so they roast rather than steam.

Step 5: Bake to Golden Perfection

  1. Lightly spray the top of the breaded cauliflower with cooking spray (olive oil, avocado oil, or vegetable oil spray).
  2. Bake at 425°F (220°C) for 22 to 25 minutes , flipping halfway through, until the exterior is deeply golden brown and crunchy, and the cauliflower inside is tender when pierced with a fork.

Step 6: Make the Bang Bang Sauce

  1. While the cauliflower bakes, combine the mayonnaise, sweet Thai chili sauce, Sriracha, honey, rice vinegar, and minced garlic in a bowl.
  2. Whisk until smooth and creamy. Taste and adjust heat by adding more Sriracha if desired.

Step 7: Toss, Garnish & Serve

  1. Remove the cauliflower from the oven.
  2. Transfer the hot, crispy bites into a large mixing bowl. Drizzle half to three-quarters of the Bang Bang sauce over the top and gently fold with a rubber spatula until coated.
  3. Transfer immediately to a serving dish, garnish with sliced green onions and toasted sesame seeds, and serve warm with the remaining sauce on the side for dipping!
