Instructions

Phase 1: Preparation (Time: 10 Minutes | Intensity: Low)

  1. Cut the Potatoes: Slice your washed potatoes into ¼-inch thick sticks. You can leave the skin on for extra texture and nutrients, or peel them if you prefer a classic look.
  2. Soak (Optional but Recommended): Place the cut fries in a bowl of cold water for 10 minutes to remove excess starch. This prevents them from sticking together. Note: If you skip this, simply rinse them under cold running water until the water runs clear.
  3. Dry Thoroughly: Drain the potatoes and spread them out on a clean kitchen towel. Pat them completely dry. Any moisture left on the potato will steam them instead of crisping them.

Phase 2: The Egg Wash & Coating (Time: 5 Minutes | Intensity: Medium)

  1. Make the Egg Wash: In a large bowl, whisk together the egg and 1 tablespoon of water until frothy.
  2. Prepare the Dry Mix: In a separate small bowl, mix the cornstarch, garlic powder, smoked paprika, onion powder, salt, and pepper.
  3. Coat the Fries: Add the dry potato sticks to the egg wash bowl. Toss with your hands (or a spatula) ensuring every fry is coated in the egg mixture.
  4. Apply the Dry Rub: Sprinkle the cornstarch/spice mixture over the wet fries. Toss gently until the fries are evenly coated in a white, powdery layer. They will look slightly messy—this is what creates the batter!

Phase 3: Air Frying – The “Low & Slow” Start (Time: 12 Minutes | Intensity: Low)

  1. Preheat: Preheat your air fryer to 350°F (175°C) for 3 minutes.
  2. Load the Basket: Place the coated fries into the air fryer basket. Do not overcrowd. If you have a smaller air fryer, cook in two batches. Overcrowding leads to steaming, not frying.
  3. First Cook: Set the temperature to 350°F (175°C) and cook for 12 minutes . This lower temperature is crucial to cook the potato through and set the egg/cornstarch batter so it doesn’t burn.

Phase 4: The Crisping Blast (Time: 8 Minutes | Intensity: High)

  1. Shake: After the first 12 minutes, pull the basket out and give it a vigorous shake to turn the fries.
  2. Oil Spray: Lightly spray the fries with the olive oil (or drizzle and toss). This helps conduct heat and creates that golden color.
  3. High Heat: Increase the air fryer temperature to 400°F (200°C) .
  4. Final Cook: Cook for another 6-8 minutes . Check them at the 6-minute mark. You want them golden brown and audibly crispy.

Phase 5: Finishing & Serving (Time: 2 Minutes | Intensity: Low)

  1. Season Immediately: Once removed from the air fryer, transfer the fries to a bowl and immediately sprinkle with a pinch of flaky sea salt. The heat helps the salt stick.
  2. Serve: Serve hot with ketchup, garlic aioli, or your favorite dipping sauce.
