Instructions

Step 1: Preheat the Air Fryer (3 minutes)

  1. Preheat your air fryer to 375°F (190°C) for 3 minutes . Preheating is important here — it gives the pita an immediate burst of heat so the bottom crisps while the cheese melts, rather than turning soggy.

Step 2: Prepare the Pitas (2 minutes)

  1. Brush one side of each pita lightly with olive oil. This helps the base crisp and adds flavor. If your pitas have a pocket, you can split them open for an even thinner, crispier crust — but thick, pocketless pitas work best for sturdy personal pizzas.

Step 3: Add the Sauce (1 minute)

  1. Spread 2 tablespoons of pizza sauce evenly over each pita, leaving a ½-inch border around the edge. Don’t over-sauce — too much moisture prevents the crust from crisping and can make the center soggy.

Step 4: Add the Cheese and Seasonings (1 minute)

  1. Sprinkle half the mozzarella over each pita, distributing it evenly to the edges. Season with dried oregano, garlic powder, and red pepper flakes (if using).

Step 5: Add Your Toppings (1 minute)

  1. Arrange your chosen toppings over the cheese. Keep toppings light and thinly sliced — overcrowding the pita makes it heavy and prevents even cooking. If using pepperoni, tuck the slices slightly under the cheese to prevent them from flying around during cooking.

Step 6: Air Fry the Pizzas (6–8 minutes)

  1. Carefully place one pita pizza in the air fryer basket (cook one at a time for the crispiest result, or two side by side if your basket is large enough). Air fry at 375°F (190°C) for 6–8 minutes , until the cheese is melted, bubbly, and lightly golden and the pita edges are crisp. Check at 5 minutes the first time — every air fryer runs differently.

Step 7: Finish and Serve (1 minute)

  1. Using tongs, transfer the pizza to a cutting board. Sprinkle with grated Parmesan, scatter fresh basil leaves, and drizzle with hot honey or chili oil if desired. Slice into quarters with a pizza cutter and serve immediately.

Step 8: Store

  1. Pita pizzas are best enjoyed fresh, but leftovers keep in an airtight container in the refrigerator for up to 2 days . Reheat in the air fryer at 350°F (175°C) for 3–4 minutes — the microwave will make the pita rubbery. Assemble uncooked pita pizzas ahead of time, wrap tightly, and refrigerate for up to 24 hours before air frying.
