Instructions
- Step 1: Preheat the Air Fryer (Intensity: Low) Set your air fryer to 375°F (190°C) and preheat for 3 minutes . Preheating is important here—it ensures the tortilla begins crisping immediately rather than drying out slowly as the basket comes up to temperature. If your air fryer has no preheat function, simply run it empty for 3 minutes at the same setting.
- Step 2: Assemble the Quesadilla (Intensity: Low) Lay one tortilla flat on a clean cutting board or piece of parchment. Sprinkle half the shredded cheese evenly over the entire surface, leaving a ½-inch border around the edge. If using chili powder, cilantro, or any add-ins, scatter them over the cheese now. Top with the remaining cheese—this “cheese sandwich” structure helps the two layers fuse and holds the fillings in place. Place the second tortilla on top and press down gently with your palm.
- Step 3: Optional Oil Brush (Intensity: Low) Lightly brush the top tortilla with the neutral oil or melted butter and sprinkle with a pinch of salt. This step is optional but gives a noticeably crispier, more golden surface. If you prefer to skip oil entirely, the quesadilla will still crisp, just slightly less evenly.
- Step 4: First Air Fry (Intensity: Medium—Watch It) Carefully place the quesadilla in the air fryer basket. If your basket is small, you may need to fold it in half (a “half-moon” shape) or trim the tortilla to fit. Air fry at 375°F for 3–4 minutes . The timing varies by model, so check at the 3-minute mark: the top should be lightly golden and the edges beginning to firm up. Do not walk away for the full time—thin tortillas can go from golden to charred in under a minute.
- Step 5: Flip and Finish (Intensity: Medium—Watch It) Using tongs and a spatula (or a single wide spatula), flip the quesadilla carefully. If you oiled the top, the surface will be hot and slick—move deliberately. Air fry for another 3 minutes , until the second side is golden and crisp and the cheese is fully melted. If your air fryer runs hot, reduce to 2 minutes and check.
- Step 6: Rest and Slice (Intensity: Low) Transfer the quesadilla to a cutting board and let it rest for 1 minute . This brief rest allows the molten cheese to set slightly so it doesn’t all run out when cut. Slice into 4 wedges with a sharp knife or pizza cutter and serve immediately with salsa, sour cream, or guacamole on the side.
