Instructions
Step 2: Prepare the Choux Dough
- In a medium saucepan, combine:
- Water
- Butter
- Salt
- Bring the mixture to a gentle boil over medium heat.
- Once the butter has completely melted, add the flour all at once.
- Stir vigorously using a wooden spoon.
- Continue stirring for approximately 2 minutes until a smooth dough forms and pulls away from the sides of the pan.
Step 3: Cool the Dough Slightly
- Remove the saucepan from the heat.
- Allow the dough to cool for 5 minutes.
- This prevents the eggs from cooking when added.
- The dough should still be warm but not hot.
Step 4: Add the Eggs
- Add the eggs one at a time.
- Mix thoroughly after each addition.
- Initially, the dough may appear separated, but continue mixing until smooth.
- The finished dough should be glossy, thick, and pipeable.
- It should slowly fall from the spoon in a ribbon-like consistency.
Step 5: Pipe the Cream Puffs
- Transfer the dough to a piping bag.
- Pipe 12 evenly sized mounds onto the prepared baking sheet.
- Leave approximately 2 inches between each mound.
- Smooth any pointed tops with a damp fingertip.
- This helps create evenly shaped cream puffs.
Step 6: Bake the Pastry Shells
- Place the baking sheet in the oven.
- Bake at 425°F (220°C) for 15 minutes.
- Without opening the oven door, reduce the temperature to 375°F (190°C).
- Continue baking for an additional 15 minutes.
- The cream puffs should become:
- Deep golden brown
- Crisp on the outside
- Light and hollow inside
- Avoid opening the oven during baking, as sudden temperature changes can cause collapse.
Step 7: Cool Completely
- Remove the cream puffs from the oven.
- Transfer them to a cooling rack.
- Allow them to cool completely before filling.
- For extra crispness, poke a small hole in each puff to release steam.
Step 8: Prepare the Vanilla Cream
- In a large mixing bowl, combine:
- Heavy whipping cream
- Powdered sugar
- Vanilla extract
- Beat with an electric mixer until stiff peaks form.
- The cream should be light, fluffy, and able to hold its shape.
Step 9: Fill the Cream Puffs
- Once the shells have cooled, slice each puff in half horizontally.
- Alternatively, use a piping bag to fill them through a small opening.
- Generously fill each shell with vanilla whipped cream.
- Replace the tops carefully.
Step 10: Garnish and Serve
- Dust with powdered sugar.
- Optional toppings include:
- Melted chocolate drizzle
- Caramel sauce
- Fresh strawberries
- Raspberries
- Serve immediately for the best texture and flavor.
