Instructions

Step 1: Prep the Zucchini (5 minutes)

  1. Wash and dry the zucchini. Trim off both ends.
  2. Slice into rounds about ⅛ inch (3 mm) thick using a mandoline or sharp knife. Keep the thickness consistent.
  3. Lay the slices on a wire rack or paper towels. Sprinkle evenly with 1 tsp salt and let sit for 10 minutes. Moisture will bead on the surface.
  4. Pat thoroughly dry with paper towels. This step is critical — dry slices = crispy crisps.

Step 2: Set Up the Breading Station (5 minutes)

  1. In bowl 1, combine flour, garlic powder, onion powder, smoked paprika, black pepper, and ¼ tsp salt.
  2. In bowl 2, beat the eggs until smooth.
  3. In bowl 3, mix panko breadcrumbs and grated Parmesan.

Step 3: Coat the Zucchini (5 minutes)

  1. Dredge each zucchini slice in the flour mixture, shaking off excess.
  2. Dip into the beaten egg, letting excess drip off.
  3. Press firmly into the panko-Parmesan mixture, coating both sides. Set coated slices on a clean rack. (Do not stack.)

Step 4: Preheat the Air Fryer (3 minutes)

  1. Preheat the air fryer to 400°F (200°C) for 3 minutes . Preheating ensures immediate crisping.

Step 5: Air Fry — Batch 1 (6–7 minutes)

  1. Lightly spray the air fryer basket with oil.
  2. Arrange a single layer of coated zucchini in the basket, leaving space between slices. Do not overcrowd.
  3. Spray the tops lightly with oil.
  4. Cook at 400°F (200°C) for 6–7 minutes , flipping halfway through (at the 3-minute mark). Cook until golden brown and crisp.

Step 6: Air Fry — Batches 2 and 3 (6–7 minutes each)

  1. Repeat with remaining batches. Keep finished crisps warm on a rack in a 200°F (95°C) oven if desired.
  2. Total cook time: about 12–14 minutes across 2–3 batches.

Step 7: Serve

  1. Transfer to a serving plate. Garnish with fresh parsley if using.
  2. Serve immediately with dipping sauce of choice.
