These Garlic Butter Steak Bites with Potatoes look and taste like a restaurant meal, but come together in one skillet in just 30 minutes. Tender, juicy steak bites seared in rich herb garlic butter alongside crispy golden potato chunks.

Ingredients

For the Potatoes:

  • 1.5 lbs baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 tsp garlic powder, 1 tsp smoked paprika, salt and pepper

For the Steak Bites:

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • Salt and black pepper — season generously
  • 2 tablespoons olive oil

Garlic Butter Sauce:

  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 tsp fresh thyme, 1 tsp fresh rosemary
  • Fresh parsley and lemon juice to finish

Instructions

Step 1: Cook the Potatoes

Toss potatoes with oil and seasoning. Cook cut-side down in hot skillet 5-6 minutes until golden. Flip, cook 4-5 more minutes. Remove and set aside.

Step 2: Sear the Steak

Pat steak cubes completely dry. Season generously. Sear in batches over high heat 1-2 minutes per side until browned. Don’t overcrowd the pan!

Step 3: Make Garlic Butter

Reduce heat to medium. Add butter, then garlic, thyme, and rosemary. Cook 1 minute until fragrant.

Step 4: Combine

Return potatoes and steak to pan. Toss in garlic butter 1-2 minutes. Finish with lemon juice and fresh parsley.
