- 15 vanilla sandwich cookies
- ½ cup freeze-dried strawberries

Instructions
1. Make the Strawberry Crunch
Crush the vanilla cookies and freeze-dried strawberries into coarse crumbs.
Mix with melted butter.
Set aside.
2. Prepare the Filling
Beat softened cream cheese with powdered sugar and vanilla until smooth.
In another bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture.
Fold in the chopped fresh strawberries.
3. Assemble the Cups
Add a layer of strawberry crunch to each serving glass.
Spoon cheesecake filling over the crumbs.
Add chopped strawberries.
Repeat the layers if desired.
4. Chill
Refrigerate for at least 2 hours.
