Ingredients

  • 1 pound ground beef (80/20 works best)
  • 1 medium onion, diced (about 1 cup)
  • 3 cloves garlic, minced (or 1 tbsp from the jar)
  • 1 pound rotini pasta (penne works too)
  • 2 cups tomato sauce
  • ¼ cup tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil and salt it. Brown ground beef in a large skillet over medium-high heat, breaking it up until crumbly and no pink remains.
  2. Drain most of the fat from the beef, leaving a tiny bit for flavor. Add onions and cook until soft and translucent, about 5 minutes. Add garlic and cook until fragrant for about 30 seconds.
  3. Stir in tomato sauce, tomato paste, Worcestershire sauce, and brown sugar. Let it simmer while the pasta cooks until the sauce is thick enough to coat the back of a spoon.
  4. Once the pasta is al dente, drain it and add it to the meat sauce. Stir everything together.
  5. Turn off the heat before adding the cheese. Fold in the cheeses gradually until melted and combined.

Use frozen onions in a pinch. Do not overcook the pasta. Ensure the heat is off before adding cheese to prevent it from becoming grainy.
