Unlike traditional crab cakes that rely heavily on breadcrumb fillers, Crab Bombs prioritize rich seafood flavor and a delicate, tender bite. Each bomb is seasoned with classic bay spices, Dijon mustard, a touch of mayonnaise for moisture, and a pinch of cayenne for subtle heat. Baked at high heat to achieve a crisp exterior while preserving a moist, luscious interior, these savory morsels deliver a restaurant-quality experience right at home. Serve them warm with fresh lemon wedges, rich melted butter, or a tangy homemade remoulade for an unforgettable starter or main course.

Ingredients

  • 1 lb (450g) Fresh Jumbo Lump Crab Meat (drained and picked over for shell fragments)
  • 1 large Egg (beaten)
  • 3 tbsp Mayonnaise (preferably full-fat for moisture)
  • 1 tsp Dijon Mustard
  • 1 tsp Worcestershire Sauce
  • 1½ tsp Old Bay Seasoning (or similar seafood seasoning)
  • 1 tbsp Fresh Lemon Juice
  • 1 tbsp Fresh Parsley (finely chopped)
  • ½ cup Panko Breadcrumbs (or crushed saltine crackers)
  • ¼ tsp Cayenne Pepper (optional, for mild heat)
  • Pinch of Salt and Cracked Black Pepper (to taste)
  • 2 tbsp Unsalted Butter (melted)
  • 1 Fresh Lemon (cut into wedges)
  • Tartar sauce or Remoulade (optional, for serving)

Instructions

  1. Preheat your oven to 425°F (218°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat. Lightly spray the surface with non-stick cooking spray to prevent sticking.
  2. In a large mixing bowl, whisk together the egg, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, fresh lemon juice, chopped parsley, cayenne pepper, salt, and black pepper until completely smooth and cohesive.
  3. Gently fold the Panko breadcrumbs into the wet mixture until evenly moistened. Add the picked jumbo lump crab meat to the bowl. Using a rubber spatula or clean hands, extremely gently fold the crab meat into the binder.
  4. Using a large ice cream scoop or a 1/3-cup measuring cup, portion the mixture into 8 round, spherical balls (approximately the size of a golf ball or slightly larger). Gently compress each portion between your palms just enough to form a compact sphere, placing each on the prepared baking sheet with about 2 inches of space between them.
  5. Place the baking sheet on the center rack of your preheated oven at 425°F (218°C). Bake for 12 to 14 minutes until the bombs are set and firm to the touch.
  6. Remove the pan briefly from the oven and brush the top of each Crab Bomb with melted butter. Switch your oven setting to High Broil. Return the baking sheet to the upper rack for 1 to 2 minutes, watching closely until the tops turn a deep golden brown and develop a delicate crisp crust.

Quality Matters: Jumbo lump crab meat yields the absolute best texture for Crab Bombs. If jumbo lump is unavailable, lump or backfin crab meat can be substituted, though the individual chunks will be smaller. Chill Before Baking (Optional): If time permits, cover and chill the shaped Crab Bombs in the refrigerator for 20 to 30 minutes before baking. This helps the binder firm up further and prevents any risk of spreading during cooking. Do Not Overmix: Over-handling breaks down the sweet, succulent crab chunks into small bits, changing the final mouthfeel from tender chunks to dense patties. Storage and Reheating: Refrigeration: Store leftover cooked Crab Bombs in an airtight container in the refrigerator for up to 2 days. Reheating: Preheat your oven or toaster oven to 350°F (175°C).
