A slow cooker recipe featuring high-quality pork sausages and caramelized onions in a rich gravy, requiring a quick initial sear for maximum flavor.
Ingredients
- 8 high-quality pork sausages (Cumberland, bratwurst, or your favorite thick-cut pork links)
- 3 large yellow or sweet onions, thinly sliced into half-moons
- 3 cloves garlic, minced
- 2 tablespoons olive oil (or butter) for searing
- 2 tablespoons all-purpose flour (to thicken the gravy)
- 2 cups low-sodium beef broth (or rich bone broth)
- 1 cup low-sodium chicken broth (or water)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 2 sprigs of fresh rosemary
- 3 sprigs of fresh thyme
- Salt and freshly cracked black pepper, to taste

- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook for 3 to 4 minutes per side until the casings are golden brown and blistered. Remove the sausages and set aside, leaving the rendered fat in the pan.
- In the same skillet with the leftover sausage fat, turn the heat down to medium-low. Add the thinly sliced yellow onions and a pinch of salt. Cook slowly, stirring occasionally, for 10 to 12 minutes until the onions become soft, translucent, and turn a rich golden-brown color. During the last 2 minutes, stir in the minced garlic until fragrant.
- Sprinkle the 2 tablespoons of all-purpose flour directly over the cooked onions and garlic. Stir continuously for 1 to 2 minutes to cook out the raw flour taste. Slowly pour in the beef broth and chicken broth, whisking constantly to prevent lumps. Stir in the Worcestershire sauce, Dijon mustard, fresh rosemary sprigs, and fresh thyme sprigs. Bring to a gentle simmer until it starts to thicken slightly, then remove from heat.
- Transfer the caramelized onion and broth mixture into the slow cooker insert. Nestle the seared sausages down into the onion gravy mixture, ensuring they are partially submerged. Cover the slow cooker with its lid. Cook on LOW for 5 to 6 hours or on HIGH for 3 to 4 hours.
- Remove and discard the woody rosemary and thyme stems from the slow cooker. Taste the gravy and season with additional salt and freshly cracked black pepper if needed. Serve hot, ladling generous amounts of the sweet onion gravy over the sausages.

Choose high-meat-content raw sausages for better flavor and texture. Deglaze the pan with broth to capture browned bits for extra flavor. For a thicker gravy, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, stir into the slow cooker, and cook on high uncovered for 15 minutes before serving.
