Ingredients

  • 2 cups unsweetened shredded coconut

Instructions

  1. Line a small baking dish or tray with parchment paper.
  2. In a large mixing bowl, combine unsweetened shredded coconut, low-carb sweetener, and sea salt. Mix until evenly distributed.
  3. Pour in melted coconut oil, coconut milk, and vanilla extract. Mix thoroughly using a spoon or spatula until the mixture holds together when pressed between your fingers. If it seems dry, add an additional teaspoon of coconut milk.
  4. Transfer the coconut mixture into the prepared pan and press firmly into an even layer about ½ inch thick.
  5. Place the pan in the freezer for 30–40 minutes until the mixture becomes firm enough to cut cleanly.
  6. Place the sugar-free chocolate and coconut oil into a microwave-safe bowl. Heat in short intervals of about 20 seconds, stirring after each interval until smooth. Alternatively, melt the chocolate over a double boiler.
  7. Remove the chilled coconut mixture from the freezer and lift it out using the parchment paper. Cut into squares, rectangles, small bars, or bite-sized cubes.
  8. Using a fork or dipping tool, place one coconut piece into the melted chocolate. Turn gently until completely coated, lift carefully, and allow excess chocolate to drip back into the bowl. Transfer the coated bite onto parchment paper. Repeat with the remaining pieces.
