Blueberry Swirl Yogurt Bites

These frozen yogurt bites are wonderfully creamy and refreshing. The tanginess of Greek yogurt pairs beautifully with the naturally sweet-tart flavor of blueberries. A little honey balances the flavors while vanilla gives the yogurt mixture a smooth dessert-like taste. They are also highly customizable and convenient for snacking.

Ingredients

  • 2 cups plain Greek yogurt or thick plain yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 cup fresh or frozen blueberries

Instructions

  1. Add the blueberries, honey, lemon juice, and water to a small saucepan. Place the saucepan over low to medium heat. Cook for approximately 4–5 minutes, stirring occasionally. The blueberries will begin to soften and release their juices. Use the back of a spoon or a potato masher to gently crush some of the berries. Once the mixture has thickened slightly and looks glossy, remove it from the heat. Allow the blueberry mixture to cool completely before swirling it into the yogurt.
  2. While the blueberries are cooling, prepare the yogurt. Place the Greek yogurt in a medium mixing bowl. Add the honey or maple syrup, vanilla extract, and lemon juice. Stir gently until everything is completely combined and the mixture is smooth. Taste the yogurt and adjust the sweetness if necessary.
  3. Line a small baking sheet, tray, or flat freezer-safe dish with parchment paper. Alternatively, you can use a silicone mini muffin mold or small silicone ice cube mold. Make sure the tray can sit flat in your freezer.
  4. Spoon small portions of the yogurt mixture onto the prepared parchment-lined tray. Each portion should be roughly 1½ to 2 tablespoons. Place a small spoonful of cooled blueberry mixture on top of each yogurt portion. Using the tip of a toothpick, skewer, or small spoon, gently swirl the blueberry mixture into the yogurt. Don’t overmix. If desired, place one fresh blueberry on top of each bite before freezing. For a little crunch, sprinkle a tiny amount of granola, chia seeds, shredded coconut, or finely chopped almonds over the top.
  5. Carefully transfer the tray to the freezer. Freeze the yogurt bites for at least 3 hours, or until they are completely firm. For the best texture, allowing them to freeze for 4 hours or overnight works especially well. Keep the tray flat while freezing so the bites maintain their shape and the blueberry swirl stays attractive.

Use thick yogurt: Greek yogurt produces the creamiest and most stable frozen bites. Regular yogurt can work, but it may contain more water and create a slightly icier texture. Cool the blueberry mixture: Always let the blueberry sauce cool before adding it to the yogurt. Don’t over-swirl: A gentle swirl gives you beautiful ribbons of blueberry throughout the bites.
