Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 3–4 minutes, stirring occasionally until softened.
  2. Add garlic and cook for another 30 seconds until fragrant.
  3. Add grated carrots, shredded cabbage, bell pepper, and sweet corn. Cook for 5–7 minutes, stirring frequently, until vegetables are tender but retain some texture.
  4. Season with salt, black pepper, and dried oregano. Mix thoroughly.
  5. Remove from heat and allow the mixture to cool for about 10 minutes to prevent the pastry from becoming soggy.
  6. Transfer the cooled vegetable mixture to a mixing bowl. Add mozzarella and cheddar cheese, mixing until evenly combined.
  7. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  8. Lightly flour a work surface. Roll out the puff pastry slightly to smooth creases and cut into 12 equal rectangles.
  9. Place approximately 2 tablespoons of filling near one edge of each pastry rectangle. Avoid overfilling.
  10. Fold the pastry over the filling and roll tightly into a log shape. Press the edges gently to seal.
  11. Place each roll seam-side down on the prepared baking sheet.
  12. Brush each roll with beaten egg. Sprinkle with sesame seeds if desired.
  13. Bake at 400°F (200°C) for 20–25 minutes until golden brown and crispy, with melted and bubbly cheese inside.
  14. Remove from the oven and allow to cool for 5 minutes before serving.
