Air Fryer Potato Skins are a delicious and easy-to-make appetizer or snack. Serve hot and feel free to customize your toppings based on personal preferences—salsa, guacamole, or diced tomatoes can also make tasty additions.

Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 4 slices of bacon, cooked and crumbled
  • Sour cream and chopped green onions for garnish

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Wash the potatoes thoroughly and pierce them several times with a fork.
  3. Place the potatoes in the air fryer basket and cook for 25-30 minutes, or until the skins are crispy and the insides are tender.
  4. Allow the potatoes to cool slightly. Cut them in half lengthwise and scoop out the insides, leaving about 1/4 inch of potato attached to the skins. Save the scooped-out potato for another use.
  5. Brush the inside and outside of the potato skins with olive oil.
  6. In a small bowl, mix garlic powder, onion powder, paprika, salt, and black pepper. Sprinkle this mixture on the inside and outside of the potato skins.
  7. Place the seasoned potato skins back into the air fryer basket and air fry for an additional 5-7 minutes, or until they become golden brown and crisp.
  8. Sprinkle shredded cheddar cheese and crumbled bacon evenly inside each potato skin.
  9. Return the loaded potato skins to the air fryer and cook for an additional 3-5 minutes, or until the cheese is melted and bubbly.
  10. Remove the potato skins from the air fryer and garnish with sour cream and chopped green onions.
