- 2 cups unsweetened shredded coconut
- ¼ cup melted coconut oil
- ¼ cup full-fat canned coconut milk
- 3 tablespoons powdered or granulated low-carb sweetener
- 1 teaspoon pure vanilla extract
- 1 small pinch of fine sea salt
- 1 cup sugar-free dark chocolate chips or chopped sugar-free chocolate
- 1 tablespoon coconut oil
Instructions
- Line a small baking dish or flat tray with parchment paper. Make sure the paper covers enough of the surface to allow you to lift the chilled coconut mixture out easily. Set the prepared tray aside while you make the filling.
- Add the unsweetened shredded coconut, low-carb sweetener, and sea salt to a large bowl. Stir thoroughly so the sweetener and salt are distributed throughout the coconut.
- Pour the melted coconut oil into the bowl. Add the full-fat coconut milk and vanilla extract. Using a silicone spatula, mix everything together until the coconut is evenly coated and the mixture begins to stick together. The finished mixture should be moist enough to hold its shape when firmly pressed. If it appears unusually dry, add another teaspoon of coconut milk and mix again.
