Chocolate Loaf Cake

Ingredients

For the Cake:

  • 1½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup milk or buttermilk
  • ½ cup hot coffee (enhances chocolate flavor)

Optional Add-ins:

  • ½ cup chocolate chips
  • ¼ cup chopped nuts (walnuts or hazelnuts)

Optional Chocolate Glaze:

  • ½ cup chocolate chips
  • ¼ cup heavy cream

Instructions

Step 1: Prepare Oven & Pan

  1. Preheat oven to 175°C (350°F)
  2. Grease and line a loaf pan

Step 2: Mix Dry Ingredients

  1. In a bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt

Step 3: Cream Butter & Sugar

  1. Beat butter and sugar until light and fluffy
  2. Add eggs one at a time
  3. Mix in vanilla extract

Step 4: Combine Batter

  1. Add dry ingredients alternately with milk
  2. Mix gently until combined

Step 5: Add Coffee

  1. Slowly stir in hot coffee (batter will be thin—this is normal)

Step 6: Add Extras

  1. Fold in chocolate chips or nuts if using

Step 7: Bake

  1. Pour batter into pan
  2. Bake for 50–60 minutes
  3. Toothpick should come out with a few moist crumbs

Step 8: Cool

  1. Cool in pan for 10–15 minutes
  2. Transfer to rack to cool completely

Step 9: Add Glaze (Optional)

  1. Heat cream and pour over chocolate chips
  2. Stir until smooth and pour over cake
