  • 1 lb (450g) Flank Steak or Sirloin: Sliced thinly against the grain.
  • 1 tbsp Cornstarch: This is the secret to velveting.
  • 1 tbsp Water
  • 1 tsp Baking Soda: Tenderizes the meat (do not skip).
  • 1 tbsp Soy Sauce
  • 1 tbsp Shaoxing Wine (or dry sherry): For depth.
  • 1 tsp Toasted Sesame Oil

For the Stir-Fry

  • 2 tbsp Vegetable or Peanut Oil: High smoke point is essential.
  • 1 Large Yellow Onion: Sliced into wedges.
  • 1 Green Bell Pepper: Cut into 1-inch squares.
  • 1 Red Bell Pepper: Cut into 1-inch squares (for color).
  • 3 cloves Garlic: Minced.

Instructions

Phase 1: The Prep (The Velveting Process)

  1. Time: 10 Minutes | Intensity: Low
  2. Slice the Beef: Pat your steak dry. It is crucial to slice the beef against the grain . This shortens the muscle fibers, making the meat tender. Slice into strips about 1/4-inch thick.
  3. The Marinade: In a medium bowl, whisk together the cornstarch, water, baking soda, soy sauce, Shaoxing wine, and sesame oil.
  4. Coat the Meat: Add the sliced beef to the marinade. Use your hands to massage the liquid into the meat until it is fully absorbed and the meat looks slightly sticky. Let this rest for at least 10 minutes (if you have 30 minutes, even better).
  5. Chop the Veggies: While the meat rests, slice the onions into wedges and the bell peppers into squares. Mince the garlic and ginger.
  6. Mix the Sauce: In a small bowl, combine the beef broth, oyster sauce, soy sauce, dark soy sauce, and brown sugar. In a separate tiny bowl, mix the cornstarch with water to create a slurry. Set both aside.

Phase 2: The Sear (High Heat)

  1. Time: 3 Minutes | Intensity: High
  2. Heat the Wok: Place your wok or large skillet over high heat until it is smoking slightly. This is critical for a good sear.
  3. Add Oil: Add 1 tablespoon of oil and swirl to coat.
  4. Sear the Beef: Carefully add the beef in a single layer. Do not crowd the pan. Let it sear for 1 minute without moving it, then stir-fry for another 30–60 seconds until it is about 80% cooked (still slightly pink).
  5. Remove: Immediately transfer the beef to a plate. It will finish cooking later.

Phase 3: The Aromatics and Veggies

  1. Time: 3 Minutes | Intensity: High
  2. Add Oil: Add the remaining tablespoon of oil to the hot wok.
  3. Aromatics: Toss in the garlic, ginger, and red pepper flakes. Stir for 10 seconds until fragrant—do not let them burn, or the dish will be bitter.
  4. The Onions: Add the onion wedges. Stir-fry for 1 minute. You want them to soften slightly but retain a crunch.
  5. The Peppers: Add the bell peppers. Stir-fry for another 1–2 minutes. The peppers should be vibrant and slightly blistered but not mushy.

Phase 4: The Glaze (Bringing it Together)

  1. Time: 2 Minutes | Intensity: Medium-High
  2. Return the Beef: Pour the beef (and any juices on the plate) back into the wok with the vegetables.
  3. Pour the Sauce: Give the sauce mixture a quick stir and pour it down the sides of the wok (this helps it heat up instantly).
  4. Toss: Toss everything together for 30 seconds.
  5. Thicken: Stir the cornstarch slurry again (it settles) and drizzle it into the wok. Toss continuously. You will see the sauce transform from watery to a glossy, thick glaze that coats the back of a spoon. This should take about 30 seconds.
  6. Finish: Turn off the heat. If using, drizzle with a little extra sesame oil.

Phase 5: The Sizzle & Serve

  1. Time: Immediate | Intensity: Presentation
  2. The Sizzle: For the authentic experience, heat a cast-iron fajita plate or a serving platter in the oven until very hot. Place the steak mixture onto the hot plate. It should audibly sizzle as it hits the surface.
  3. Serve: Serve immediately with steamed white rice or fried rice.
