- 1 lb (450 g) 80/20 ground chuck beef (divided into 8 equal balls, roughly 2 oz each)
- 8 small street taco-sized tortillas (4.5 to 5-inch corn tortillas or thin flour tortillas)
- 8 slices classic American cheese (or cheddar, pepper jack, or Monterey Jack)
- 1 tsp kosher salt
- 1 tsp freshly cracked black pepper
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tbsp high-heat oil or beef tallow (for lightly coating the griddle)
Signature Smash Burger Sauce
- 1/2 cup real mayonnaise
- 2 tbsp yellow mustard
- 2 tbsp sweet pickle relish (or finely minced dill pickles)
- 1 tbsp ketchup
- 1 tsp white vinegar
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- Pinch of cayenne pepper (optional, for mild warmth)
Crunchy Fresh Toppings
- 1 1/2 cups finely shredded iceberg lettuce (pat completely dry for maximum crunch)
- 1/3 cup finely minced white onion
- 16 crinkle-cut dill pickle chips (2 slices per taco)

Instructions
1. Whip Up the Burger Sauce
- In a small mixing bowl, combine the mayonnaise, yellow mustard, sweet relish, ketchup, white vinegar, onion powder, paprika, and optional cayenne pepper.
- Whisk thoroughly until smooth, creamy, and pale orange.
- Cover and place in the refrigerator to allow the flavors to meld while you prepare the meat.
2. Prep the Beef & Seasoning
- Divide the cold 80/20 ground beef into 8 loose, round meatballs (approx. 2 oz or 55 grams each). Do not overwork or pack the meat tightly ; loose beef yields a tender bite and craggy, caramelized edges.
- In a small ramekin, blend the kosher salt, black pepper, garlic powder, and smoked paprika. Set aside.
3. Preheat the Skillet to High Intensity
- Place your heavy cast-iron skillet or flat-top griddle over medium-high to high heat for 4 to 5 minutes until faintly smoking (surface temperature should reach 425°F–450°F / 220°C–230°C).
- Add a light rub of oil or tallow using a folded paper towel to create a thin non-stick sheen.
4. The Smash & Sear
- Place 2 beef balls onto the screaming-hot skillet, leaving at least 3 inches of clearance between them.
- Immediately place one tortilla directly on top of each beef ball.
- Lay a square of parchment paper over the tortilla. Using your burger press or rigid spatula, press down firmly with straight-down, even force for 8–10 seconds until the patty flattens across the entire diameter of the tortilla, spreading slightly past the edges.
- Peel off the parchment paper. Liberally dust the meat edges with your spice blend.
- Cook undisturbed for 2 minutes on high heat. As the patty cooks, the rendering fat sizzles into the beef crust, creating a deep brown, lacy edge.
5. Flip, Melt, and Crisp the Shell
- Slide your spatula under the patty in one decisive scrape to preserve the charred fond on the bottom. Flip the entire taco so the tortilla is now against the hot pan surface.
- Immediately place 1 slice of American cheese on top of the sizzling beef patty.
- Let cook for 1 to 1.5 minutes over medium-high heat. The tortilla will absorb the residual hot fat, crisping up to a golden, crunchy texture while the radiant heat melts the cheese.
- Remove the taco from the skillet and rest on a cutting board or taco rack. Repeat the process with the remaining beef portions and tortillas.
6. Dress and Assemble
- Spoon 1 to 2 tablespoons of chilled burger sauce over the melted cheese.
- Top each taco with a generous handful of cold shredded iceberg lettuce, diced white onions, and two dill pickle chips.
- Fold gently into a crescent shape and serve immediately while the beef is hot and the tortilla remains crackling crisp.
