  2. Mix the Savory Cheese Filling: In a medium mixing bowl, combine the 2 oz softened cream cheese, 1/4 cup shredded mozzarella, finely chopped spinach, and minced garlic. Mash and fold with a fork for 1 minute until thoroughly blended into a thick, uniform paste.
  3. Cut the Pockets: Place the chicken breasts flat on a stable cutting board. Place your non-dominant hand flat on top of the meat. Using a sharp knife, make a clean horizontal slice into the thickest side of each breast, cutting deep into the center while leaving the other three edges intact to create a deep, interior pocket.
  4. Stuff and Pin the Chicken: Divide the cheese filling evenly between the two chicken breasts (approx. 2 generous tablespoons per pocket). Press the filling deep into the cavity with a spoon.
