Step 1: Prepare the Egg Whites (Intensity: Medium)

  1. Ensure your mixing bowl is completely clean and dry. Any grease or moisture can prevent the egg whites from whipping properly. Add the egg whites and begin beating on medium speed until soft peaks form. This usually takes about 3–4 minutes.

Step 2: Add Sugar Gradually (Intensity: Medium-High)

  1. Increase the mixer speed to high and begin adding the caster sugar one tablespoon at a time. This step is crucial—adding sugar slowly ensures a stable, glossy meringue. Continue beating until stiff peaks form and the mixture feels smooth (not grainy). This process takes about 8–10 minutes.

Step 3: Incorporate Stabilizers (Intensity: Low)

  1. Reduce the mixer speed to low and gently add the vinegar, cornstarch, and vanilla extract. Mix just until combined. These ingredients help stabilize the pavlova and create its signature soft center.

Step 4: Shape the Pavlova (Intensity: Low)

  1. Place a piece of parchment paper inside your air fryer basket. Spoon the meringue mixture onto the paper and shape it into a round disc, about 6–7 inches wide. Create a slight indentation in the center to hold toppings later.
