  • 2 large apples, grated (or 1 grated + 1 diced)
  • 2 ripe bananas, mashed (natural sweetness)
  • 2 large eggs
  • 1½ cups milk (dairy or plant-based)
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional add-ins: raisins, chopped nuts, chia seeds, coconut flakes

Instructions

  1. Preheat oven to 180°C (350°F). Grease a baking dish (about 9×9 in / 23×23 cm).
  2. Mix wet: In a large bowl, mash bananas, then whisk in eggs, milk, and vanilla.
  3. Add dry: Stir in oats, baking powder, cinnamon, nutmeg, and salt.
  4. Fold in: Add grated apples (and any optional add-ins). Mix well.
  5. Rest: Let sit 5–10 min so oats absorb liquid.
  6. Bake: Pour into dish, smooth top. Bake 35–40 min until set and golden.
  7. Cool: Let rest 10 min before slicing.
