For the Steak Bites

Instructions
Step 1: Prep and Bring the Meat to Temperature
- Take the steak out of the refrigerator 15 to 20 minutes before cooking. Bringing the meat closer to room temperature prevents the interior from remaining cold while the exterior cooks, ensuring an even medium-rare to medium center.
- Trim away any thick outer silver skin or excess gristle. Cut the steak into uniform 1-inch cubes. Pat each piece thoroughly dry using paper towels. Removing surface moisture is the single most critical step for achieving a deep browned crust rather than steaming the meat.
Step 2: Season the Steak
- Place the steak cubes into a medium mixing bowl. Drizzle with the avocado oil and toss to coat every surface evenly.
- In a small ramekin, combine the kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and dried oregano. Sprinkle the spice mix evenly over the beef. Toss thoroughly with tongs or clean hands until every cube is generously and evenly coated.
Step 3: Prepare the Garlic Herb Butter
- In a small bowl, combine the softened butter, minced garlic, fresh parsley, rosemary, thyme, flaky sea salt, and optional red pepper flakes. Use a fork or silicone spatula to mash and blend the ingredients until creamy, fragrant, and fully integrated. Set aside at room temperature.
Step 4: Preheat the Air Fryer
- Preheat your air fryer to 400°F (200°C) for 4 to 5 minutes. A scorching-hot basket is vital to flash-sear the exterior of the beef cubes immediately on contact.
Step 5: Air Fry the Steak Bites
- Once preheated, slide out the basket. Lightly mist the basket with high-heat cooking oil spray (avoid aerosol propellant sprays that can degrade non-stick coatings).
- Arrange the seasoned steak bites in a single, spaced layer across the basket. Do not crowd or stack the meat. If your air fryer basket is compact, cook in two separate batches to maintain proper airflow.
- Cook at 400°F (200°C) :
- For Medium-Rare (Internal 130°F–135°F / 54°C–57°C): 5 to 6 minutes total.
- For Medium (Internal 140°F–145°F / 60°C–63°C): 6 to 7 minutes total.
- For Medium-Well (Internal 150°F–155°F / 65°C–68°C): 7 to 8 minutes total.
- At the 3- to 4-minute mark, vigorously shake the basket or use tongs to flip the steak cubes over, ensuring all facets develop crisp, caramelized edges.
Step 6: Toss in Garlic Herb Butter and Rest
- Immediately transfer the sizzling steak bites from the air fryer basket into a clean heatproof serving bowl.
- Drop the prepared garlic herb butter directly over the hot steak bites. Gently toss the meat for 30 to 45 seconds. The scorching residual heat of the beef will instantly melt the butter, creating an aromatic, glossy emulsified pan sauce that coats every single bite.
- Let the meat rest in the butter sauce for 3 to 5 minutes before serving to allow the internal muscle fibers to relax and redistribute their flavorful juices.
