Ingredients

For the Potato Base:

  • 4 large Yukon Gold or Russet Potatoes (approx. 700g / 1.5 lbs), peeled and quartered
  • 3 tbsp Cornstarch (or rice flour for extra crunch)
  • 1/2 tsp Salt (for potato boiling water)

Aromatics & Flavorings:

  • 1 tbsp Vegetable oil or Ghee (for sautéing aromatics)
  • 1 medium Yellow Onion , finely diced
  • 2 cloves Garlic , minced
  • 1 tsp Fresh Ginger , finely grated
  • 1–2 Green Chilies (optional), finely chopped

Dry Spices & Seasoning:

  • 1 tsp Ground Cumin
  • 1/2 tsp Garam Masala (or smoked paprika for a Western twist)
  • 1/2 tsp Ground Coriander
  • 1/2 tsp Black Pepper , freshly cracked
  • 1 tsp Fine Sea Salt (adjust to taste)
  • 1/2 tsp Amchur (Dry Mango Powder) or 1 tbsp Fresh Lemon Juice for acidity

Fresh Herbs & Binding/Coating:

  • 1/4 cup Fresh Cilantro or Parsley , finely chopped
  • 2 tbsp Breadcrumbs (panko preferred for extra crunch)
  • 3–4 tbsp Neutral Oil (Canola, Vegetable, or Avocado oil for pan-frying)

Instructions

Step 1: Boil and Dry the Potatoes

  1. Place the peeled, quartered potatoes into a large pot. Cover with cold water by at least 1 inch and add 1/2 teaspoon of salt.
  2. Bring the pot to a High Heat rolling boil. Reduce heat slightly to Medium-High and cook for 15–18 minutes, or until a fork slides easily into the thickest piece without resistance.
  3. Drain completely in a colander. Crucial Tip: Let the hot potatoes sit in the warm, dry pot for 5 minutes so excess residual moisture evaporates. Steam is the enemy of a crisp patty!

Step 2: Sauté the Aromatics

  1. While the potatoes dry, heat 1 tablespoon of oil in a small skillet over Medium Heat .
  2. Add the diced onions and sauté for 2–3 minutes until soft and translucent.
  3. Add the minced garlic, grated ginger, and green chilies. Sauté for another 60 seconds until fragrant. Remove from heat and let cool slightly.

Step 3: Mash and Combine

  1. Transfer the warm potatoes to a large mixing bowl. Mash thoroughly using a potato ricer or hand masher until completely smooth with no remaining lumps.
  2. Add the sautéed aromatic mixture, ground cumin, garam masala, ground coriander, black pepper, sea salt, and dry mango powder (or lemon juice).
  3. Fold in the finely chopped fresh cilantro, cornstarch, and breadcrumbs.
  4. Mix well using a spoon or clean hands until a soft, cohesive dough forms. If the mixture feels too sticky, add an extra tablespoon of cornstarch.

Step 4: Shape the Patties

  1. Divide the potato mixture into 8 equal portions.
  2. Roll each portion into a smooth ball between your palms, then gently press down to form a patty roughly 3/4-inch thick.
  3. Smooth out any cracks along the edges with your fingers to prevent the patties from breaking apart while cooking.

Step 5: Pan-Fry to Golden Perfection

  1. Heat 3 to 4 tablespoons of oil in a large heavy-bottomed skillet or cast-iron pan over Medium-High Heat .
  2. Test the oil temperature by dropping a tiny speck of potato mixture into the pan; if it sizzles immediately, the pan is ready.
  3. Carefully place 4 patties into the pan, leaving enough room between them so the pan is not overcrowded.
  4. Cook over Medium-High Heat for 4 to 5 minutes without disturbing them, allowing a rich golden crust to form underneath.
  5. Gently flip using a flat spatula. Reduce heat slightly to Medium and cook the second side for another 3 to 4 minutes until equally golden and crisp.
  6. Transfer the fried patties to a plate lined with paper towels to drain any excess oil. Repeat with the remaining 4 patties.
