For the Sweet Potatoes

Instructions
Step 1: Prep & Cross-Hatch the Sweet Potatoes
- Wash and thoroughly scrub the sweet potatoes under cold running water. Pat them completely dry with a kitchen towel.
- Slice off a very thin lengthwise sliver from the bottom of each potato so it sits flat and stable on your cutting board.
- Slice off approximately ¼ inch from the very top end of each potato to expose a flat surface.
- Place two chopsticks or wooden spoon handles parallel to each other on either side of the sweet potato. These act as guards to prevent your knife from slicing all the way through.
- Using a sharp chef’s knife, make vertical parallel cuts down the length of the potato, spaced about ¼-inch apart, cutting down until the knife hits the chopsticks.
- Rotate the potato 90 degrees and make perpendicular cuts of equal spacing to form a cross-hatch or grid pattern.
Step 2: Initial Air Fry (Soften & Bloom)
- Preheat your air fryer to 380°F (193°C) for 3 minutes.
- Coat the outside and top of the prepared sweet potatoes with the 1 ½ tablespoons olive oil , gently massaging it into the top slits. Season with ½ teaspoon fine sea salt .
- Place the sweet potatoes cut-side up into the air fryer basket. Ensure there is space around each for air circulation.
- Air fry at 380°F (193°C) for 20 minutes .
- At the 20-minute mark, carefully check the potatoes. The heat will have started softening the core, allowing the cross-hatched sections to fan out slightly (“bloom”).
Step 3: Glaze with Garlic-Herb Butter
- In a small bowl, combine the 3 tablespoons melted butter , minced garlic , thyme , rosemary , smoked paprika , and black pepper .
- Remove the air fryer basket. Using a pastry brush or spoon, generously coat the sweet potatoes with the garlic-herb butter, letting the melted butter drip deep inside the bloomed crevices.
Step 4: Final Crisp & Roast
- Return the glazed sweet potatoes to the air fryer.
- Cook at 380°F (193°C) for an additional 12 to 15 minutes , or until the exterior edges are deep golden-brown, crispy, and a sharp knife pierces the center core with zero resistance.
Step 5: Garnish and Serve
- Use tongs to carefully transfer the bloomed sweet potatoes to a platter.
- Top with freshly chopped parsley, a sprinkle of flaky sea salt, and an optional drizzle of hot honey or crumbled cheese if desired. Serve immediately while piping hot!
