Broccoli & Cheese Base
- 3 cups Fresh Broccoli Florets (finely chopped, roughly 8 oz)
- 1 cup Sharp Cheddar Cheese (shredded from a block for best melt)
- ¼ cup Cream Cheese (softened to room temperature)
- ½ cup Shredded Mozzarella Cheese (for extra stretch)
- 1 Large Egg (beaten)
- ⅓ cup Almond Flour or Fine Breadcrumbs (acts as a binder)
- 2 Green Onions (thinly sliced)
- 2 cloves Garlic (minced)
- ½ teaspoon Onion Powder
- ½ teaspoon Garlic Powder
- ½ teaspoon Smoked Paprika
- ½ teaspoon Fine Sea Salt
- ¼ teaspoon Freshly Ground Black Pepper

Step 1: Steam & Par-Cook the Broccoli
- Place the finely chopped broccoli florets into a microwave-safe bowl with 2 tablespoons of water.
- Cover tightly with a microwave-safe plate or plastic wrap. Microwave on HIGH for 2 minutes until bright green and slightly softened.
- Drain thoroughly in a fine-mesh strainer.
- Crucial Step: Transfer the broccoli to a clean kitchen towel or paper towels and squeeze out as much excess moisture as possible. Excess liquid will cause the bites to become soggy rather than crispy.
- Transfer the dried broccoli to a cutting board and run a chef’s knife over it to ensure it is very finely minced.
Step 2: Combine the Base Mixture
- In a large mixing bowl, stir together the softened cream cheese, minced garlic, garlic powder, onion powder, smoked paprika, sea salt, and black pepper until smooth.
- Add the beaten egg, almond flour (or fine breadcrumbs), sharp cheddar, mozzarella, and sliced green onions. Mix well.
- Fold in the finely minced, steamed broccoli until evenly incorporated.
- Chill the mixture in the refrigerator for 15 to 20 minutes . Chilling firms up the fats in the cheese and butter, making the mixture much easier to shape without sticking to your hands.
Step 3: Set Up the Breading Station
- In a shallow bowl, whisk the second egg with 1 tablespoon of water to create the egg wash.
- In another shallow bowl, combine the panko breadcrumbs, grated parmesan cheese, and ¼ teaspoon of garlic powder.
Step 4: Shape and Coat the Bites
- Line a small baking sheet with parchment paper.
- Scoop roughly 1.5 tablespoons of the chilled broccoli-cheese mixture and firmly roll it between your palms to form a compact 1-inch ball or slightly flattened patty.
- Dip each ball into the egg wash, letting any excess drain off.
- Roll immediately in the seasoned panko mixture, pressing gently so the breadcrumbs adhere evenly to all sides.
- Place the coated bite onto the prepared baking sheet. Repeat for the remaining mixture (you should yield roughly 16 bites).
Step 5: Air Fry to Golden Perfection
- Preheat your air fryer to 375°F (190°C) for 3 to 4 minutes.
- Lightly coat the air fryer basket with non-stick cooking spray.
- Arrange the broccoli cheese bites in a single layer in the basket, ensuring at least ½ inch of space around each piece so hot air can circulate freely. Cook in batches if necessary—do not overcrowd the basket.
- Lightly spray the tops of the bites with avocado or olive oil spray.
- Air fry at 375°F (190°C) for 10 to 12 minutes . At the 6-minute mark , carefully flip each bite using silicone tongs or a fork, lightly spray the top side again, and continue cooking until deep golden brown and crispy.
Step 6: Rest & Serve
- Remove the bites from the air fryer and allow them to rest in the basket or on a wire rack for 3 to 5 minutes before serving. This allows the hot melted cheese to set slightly so the bites hold their shape.
- Serve warm with your favorite dipping sauce.
