Place the 2 slices of low-carb high-protein bread on a baking sheet and toast for 1–2 minutes per side until light golden brown and firm to the touch. - Season and Layer (Flavor Building): Remove the toasted bread from the oven. Rub the cut edge of the fresh garlic clove directly across the surface of each warm slice. Drizzle with extra virgin olive oil, then top each slice evenly with half of the shredded mozzarella cheese.
- Add Tomatoes & Broil (Melting & Searing): Arrange the dried tomato slices on top of the cheese layer. Sprinkle with Italian seasoning, salt, and freshly cracked black pepper.
