Ingredients

For the Dough:

  • All-Purpose Bread Flour: 2 cups (250g), plus extra for dusting and kneading

Step 1: Activating the Yeast

  1. In a large mixing bowl, combine the warm water (or milk), granulated sugar, and active dry yeast. Stir gently and let it sit for 5 to 10 minutes until the surface becomes frothy and bubbly. This confirms your yeast is alive and active.

Step 2: Mixing and Kneading the Dough

  1. Add the melted butter, salt, and half of the bread flour (1 cup) into the yeast mixture. Stir with a spatula until a wet batter forms. Gradually add the remaining flour until a shaggy dough comes together.
  2. Turn the dough out onto a lightly floured clean work surface. Knead firmly for 8 to 10 minutes , pushing the dough away with the heel of your hand and folding it back over, until it transforms into a smooth, elastic, and slightly tacky ball.

Step 3: The First Rise

  1. Lightly oil a clean bowl and place your dough ball inside, turning it over once to coat it with oil. Cover the bowl tightly with a damp kitchen towel or plastic wrap. Place it in a warm, draft-free spot for 1 hour , or until the dough has doubled in size.

Step 4: Shaping and Braid Technique

  1. Once doubled, gently punch down the dough to release the trapped air and transfer it back to your floured surface.
  2. Divide the dough evenly into 3 equal portions .
  3. Roll each portion under your palms into long, uniform ropes, roughly 10 to 12 inches in length.
  4. Lay the three ropes side by side, pinching them together securely at the top end.
  5. Cross the right rope over the middle rope, then the left rope over the new middle rope. Repeat this simple over-under pattern all the way to the bottom, then pinch the ends together firmly and tuck them underneath the loaf for a clean finish.

Step 5: Second Proofing in the Pan

  1. Transfer your braided loaf into a small parchment-lined baking pan or small loaf tin that is guaranteed to fit comfortably inside your air fryer basket. Cover it loosely and let it rest for 30 minutes in a warm spot for its final puff.

Step 6: Air Fryer Baking

  1. Preheat your air fryer to 320°F (160°C) . Lower temperatures are crucial for air fryer baking to ensure the exterior doesn’t burn before the dense center cooks through.
  2. Gently brush the top of the risen braided loaf with your prepared egg wash for a brilliant golden shine. Sprinkle with seeds or flaky salt if desired.
  3. Carefully place the pan into the air fryer basket.
  4. Bake for 25 to 30 minutes . Around the 15-minute mark, check the loaf; if the top is browning too rapidly, lay a small square of aluminum foil loosely over the top to shield it from direct heating elements.
