Ingredients
- 2 large sweet potatoes (about 1.5 lbs), washed, dried, and cut into uniform ½-inch to ¾-inch cubes
- 1 large yellow or red onion, peeled and sliced into bite-sized wedges or thick ¾-inch chunks
- 1.5 tablespoons extra virgin olive oil (or avocado oil)
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme (or oregano)

Instructions
- Wash and dry 2 large sweet potatoes. Cut them into uniform ½-inch to ¾-inch cubes. Peel 1 large yellow or red onion and slice it into bite-sized wedges or thick ¾-inch chunks.
- In a large mixing bowl, combine the cubed sweet potatoes and sliced onions. Drizzle with 1.5 tablespoons of extra virgin olive oil (or avocado oil). Sprinkle over 1 teaspoon garlic powder, 1 teaspoon smoked paprika, ½ teaspoon dried thyme (or oregano), ¾ teaspoon fine sea salt, and ¼ teaspoon freshly cracked black pepper. Toss thoroughly until every piece is evenly coated.
- Preheat your air fryer to 390°F (200°C) for 3 minutes.
- Transfer the seasoned vegetables into the preheated air fryer basket and spread them out evenly. If the air fryer is small, cook in two separate batches to avoid overcrowding.
- Set the air fryer timer for 18 to 20 minutes at 390°F (200°C).
- At the 10-minute mark, pause the air fryer and pull out the basket. Give it a vigorous shake or use tongs to toss the vegetables for even heat distribution.
- Return the basket to the air fryer and continue cooking for the remaining 8 to 10 minutes, or until the sweet potatoes are fork-tender inside and lightly charred on the outside.
- Carefully transfer the hot roasted sweet potatoes and onions to a serving dish. Garnish with freshly chopped parsley, green onions, or a squeeze of fresh lemon juice. Serve immediately.

Do not overcrowd the basket to ensure crispiness. Cut uniform pieces for even cooking. A light coating of oil is crucial for spice distribution. Leftovers can be stored in the refrigerator for up to 4 to 5 days or frozen for up to 3 months. Reheat in the air fryer at 375°F (190°C) for 3 to 5 minutes, in the oven at 400°F (200°C) for 8 to 10 minutes, or in the microwave for 45–60 seconds (microwaving will reduce crispiness).
