Instructions

  1. Wash and dry 2 large sweet potatoes. Cut them into uniform ½-inch to ¾-inch cubes. Peel 1 large yellow or red onion and slice it into bite-sized wedges or thick ¾-inch chunks.
  2. In a large mixing bowl, combine the cubed sweet potatoes and sliced onions. Drizzle with 1.5 tablespoons of extra virgin olive oil (or avocado oil). Sprinkle over 1 teaspoon garlic powder, 1 teaspoon smoked paprika, ½ teaspoon dried thyme (or oregano), ¾ teaspoon fine sea salt, and ¼ teaspoon freshly cracked black pepper. Toss thoroughly until every piece is evenly coated.
  3. Preheat your air fryer to 390°F (200°C) for 3 minutes.
  4. Transfer the seasoned vegetables into the preheated air fryer basket and spread them out evenly. If the air fryer is small, cook in two separate batches to avoid overcrowding.
  5. Set the air fryer timer for 18 to 20 minutes at 390°F (200°C).
  6. At the 10-minute mark, pause the air fryer and pull out the basket. Give it a vigorous shake or use tongs to toss the vegetables for even heat distribution.
  7. Return the basket to the air fryer and continue cooking for the remaining 8 to 10 minutes, or until the sweet potatoes are fork-tender inside and lightly charred on the outside.
  8. Carefully transfer the hot roasted sweet potatoes and onions to a serving dish. Garnish with freshly chopped parsley, green onions, or a squeeze of fresh lemon juice. Serve immediately.

Notes

Do not overcrowd the basket to ensure crispiness. Cut uniform pieces for even cooking. A light coating of oil is crucial for spice distribution. Leftovers can be stored in the refrigerator for up to 4 to 5 days or frozen for up to 3 months. Reheat in the air fryer at 375°F (190°C) for 3 to 5 minutes, in the oven at 400°F (200°C) for 8 to 10 minutes, or in the microwave for 45–60 seconds (microwaving will reduce crispiness).
