Instructions
Phase 1: The Fruit Infusion (Intensity: Passive / Time: 30+ mins)
- 1. Rehydrate the Fruit: In a medium bowl, combine the raisins, currants, halved glacé cherries, and orange zest. Pour the hot black tea (or orange juice) over the fruit. Stir gently to combine.
- 2. The Soak: Cover the bowl with a plate or plastic wrap. Let it sit for at least 30 minutes , but ideally 2 hours or overnight . This step is crucial; it plumps the fruit, ensuring they don’t sink to the bottom of the loaf and keeping the cake moist. Intensity: Zero effort, high reward.
- 3. Drain: Once soaked, drain the fruit in a sieve over a bowl. Reserve the soaking liquid! You will need 1/4 cup of it for the batter. If you don’t have 1/4 cup, top it up with water or milk.
Phase 2: The Dry Mix (Intensity: Low / Time: 5 mins)
- 4. Preheat & Prep: Preheat your oven to 325°F (165°C) . This is a lower temperature than standard cakes; we want the loaf to bake slowly and evenly without burning the outside before the center is cooked. Grease a 9×5-inch loaf pan thoroughly with butter. Line the bottom and long sides with parchment paper, leaving an overhang for easy removal.
- 5. Whisk the Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
Phase 3: The Creaming Method (Intensity: Medium-High / Time: 5 mins)
- 6. Cream Butter and Sugar: In the bowl of a stand mixer (or using a hand mixer), beat the softened butter and brown sugar together on medium-high speed for 3–4 minutes . The mixture should become visibly lighter in color and fluffy in texture. This incorporates air, which is the primary leavening agent for the texture.
- 7. Add Eggs: Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl. Beat in the vanilla extract. Intensity: Medium. Don’t rush this; if the mixture looks curdled, add a tablespoon of the flour mixture to bring it back together.
Phase 4: The Assembly (Intensity: Low / Time: 3 mins)
- 8. Alternating Additions: With the mixer on low speed , add the dry ingredients in three additions, alternating with the reserved 1/4 cup of soaking liquid and the buttermilk. Start with flour, end with flour. Mix until just combined. Do not overmix , or the loaf will be tough.
- 9. Fold in the Fruit: Remove the bowl from the mixer. Using a spatula, gently fold in the drained, soaked fruit. Ensure the fruit is evenly distributed, but be careful not to crush the cherries.
Phase 5: The Bake (Intensity: Passive / Time: 60–70 mins)
- 10. Bake: Pour the batter into the prepared loaf pan and smooth the top with your spatula. Place the pan in the center of the preheated oven.
- 11. The Tent (Optional): If your oven runs hot, or after 40 minutes of baking, loosely place a piece of aluminum foil over the top of the loaf. This prevents the top from getting too dark while the center cooks.
- 12. The Doneness Test: Bake for 60 to 70 minutes . The loaf is done when a wooden skewer inserted into the center comes out clean (or with just a few moist crumbs). If the skewer hits a raisin, it will look wet; try inserting it in a different spot.
Phase 6: Cooling and Finishing (Intensity: Patience / Time: 30 mins)
- 13. Cool in Pan: Remove the loaf from the oven and let it cool in the pan on a wire rack for 15 minutes . This allows the structure to set.
- 14. Remove and Cool Completely: Using the parchment overhang, lift the loaf out of the pan and place it directly on the wire rack. Let it cool completely before slicing. Slicing warm cake leads to crumbling.
