Instructions
Step 1: Prep the Slow Cooker Base
- Lightly grease the inside of your slow cooker insert with non-stick cooking spray or a thin coat of olive oil.
- Scatter the diced yellow onion, sliced mushrooms, and minced garlic evenly across the bottom of the crockpot.
- Slice the 2 tablespoons of butter into thin pats and dot them over the vegetable layer.
Step 2: Season and Arrange the Chicken
- Pat the chicken breasts dry with paper towels.
- In a small bowl, combine the Italian seasoning, onion powder, garlic powder, smoked paprika, red pepper flakes, salt, and black pepper.
- Rub the spice mixture evenly over both sides of the chicken breasts.
- Arrange the seasoned chicken in a single layer on top of the onion and mushroom mixture in the slow cooker.
Step 3: Mix the Creamy Liquid
- In a measuring jug or bowl, whisk together the chicken broth and heavy cream until combined.
- Pour the mixture around and over the chicken breasts.
- Distribute the cubed, softened cream cheese evenly over the top of the chicken. Do not worry about stirring it in now; as it warms, it will melt effortlessly into the sauce.
Step 4: Slow Cook to Perfection (Cooking Intensities)
- Cover the slow cooker with its lid.
- Choose your cooking intensity based on your schedule: Low Intensity / Slow Pace: Cook on LOW for 6 to 7 hours . This lower temperature creates exceptionally tender, juicy meat and allows the herbs to infuse deeply into the cream.
- High Intensity / Fast Pace: Cook on HIGH for 3.5 to 4 hours . Ideal when you need dinner on the table sooner without sacrificing moisture or tenderness.
Step 5: Shred, Stir, and Fold
- Once the cooking time is up, carefully remove the chicken breasts using tongs and place them on a clean cutting board or plate.
- Using two forks, shred the chicken into thick, bite-sized pieces (or leave them whole if you prefer plated cutlets).
- Whisk the hot sauce remaining in the slow cooker until the melted cream cheese and chicken broth blend into a smooth, silky liquid.
- Whisk in the freshly grated Parmesan cheese until fully melted and integrated into the sauce.
- Add the fresh baby spinach to the slow cooker and stir until it wilts in the hot cream sauce (about 2–3 minutes).
- Return the shredded chicken to the slow cooker and toss gently to coat every piece in the velvety sauce. Cover and let sit on the “Keep Warm” setting for 5–10 minutes so the chicken absorbs the flavors.
