Instructions
Step 1: Prepare the Hawaiian Sauce
- In a small mixing bowl or liquid measuring cup, combine the pineapple juice , low-sodium soy sauce , packed brown sugar , apple cider vinegar , ketchup , toasted sesame oil , and red pepper flakes .
- Whisk thoroughly until the brown sugar completely dissolves. Set aside.
Step 2: Prepare the Slurry & Season the Chicken
- In a separate tiny bowl, stir together the cornstarch and cold water until smooth and lump-free. Set aside.
- Lightly pat the chicken pieces dry with paper towels. Season lightly with a pinch of salt and black pepper.
Step 3: Sear the Chicken (Intensity: Medium-High Heat)
- Heat 1 tablespoon of cooking oil in your skillet or wok over medium-high heat until shimmering.
- Add the chicken pieces in a single layer (cook in batches if your pan is small to prevent overcrowding).
- Sear for about 5–6 minutes , turning occasionally, until the chicken develops a nice golden crust and is cooked through (internal temperature reaches 165°F / 74°C).
- Transfer cooked chicken to a plate and keep warm.
Step 4: Sauté Vegetables & Pineapple (Intensity: High Heat)
- In the same skillet, add the remaining 1 tablespoon of cooking oil .
- Add the chunked bell peppers and red onion . Stir-fry over high heat for about 3–4 minutes until the edges are lightly charred but the vegetables remain crisp-tender.
- Add the minced garlic , grated ginger , and pineapple chunks . Toss continuously for 1 minute until fragrant and warmed through.
Step 5: Combine & Thicken Sauce (Intensity: Medium Heat)
- Lower heat to medium . Push the vegetables and pineapple toward the outer rim of the skillet to create a well in the center.
- Re-whisk the prepared sauce mixture and pour it into the skillet center. Bring to a rapid simmer for about 1–2 minutes .
- Give your cornstarch slurry a quick stir, then gradually pour it into the simmering sauce while whisking constantly.
- Allow the sauce to cook for 1 minute until it thickens into a rich, glossy glaze that coats the back of a spoon.
Step 6: Final Toss & Serve
- Return the seared chicken (along with any accumulated juices) to the skillet.
- Toss everything together for 1–2 minutes until every piece of chicken, vegetable, and pineapple is thoroughly coated in the warm Hawaiian glaze.
- Remove from heat immediately.
