Total time20–22 minutes Why You’ll Love This Recipe These air fryer hot chicken ham and cheese wraps are the answer to every “what’s for dinner?” moment. They’re crispy on the outside, melty and savory on the inside, and they come together in about 20 minutes with almost no cleanup. The air fryer does all the heavy lifting, giving you that golden, toasted tortilla texture you’d normally get from a panini press — without the extra oil. They’re perfect for a quick weeknight dinner, a game-day snack, or a packed lunch (wrap them in foil and they stay warm for hours). You can also customize them endlessly: swap the ham for turkey, add pickled jalapeños for heat, or use pepper jack instead of cheddar for a little kick.

Instructions
- Step 1 — Make the spicy sauce (2 minutes). In a small bowl, whisk together the mayonnaise, Dijon mustard, hot sauce, garlic powder, smoked paprika, and black pepper until smooth. Taste and adjust the heat — add more hot sauce if you like things fiery.
- Step 2 — Warm the tortillas (30 seconds each). Microwave the tortillas for 20–30 seconds, or warm them in a dry skillet over medium heat for about 30 seconds per side. Warm tortillas are flexible and won’t crack when you roll them. Keep them covered with a clean kitchen towel while you work.
- Step 3 — Build the wraps (4 minutes). Lay a tortilla flat. Spread about 1½ teaspoons of the spicy sauce over the surface, leaving a 1-inch border. Layer on 2 slices of ham, then about ½ cup shredded chicken, then ⅓ cup shredded cheese. Add pickles, jalapeños, or red onion if using. Fold in the sides of the tortilla, then roll tightly from the bottom up. Secure with a toothpick if needed. Repeat with the remaining tortillas.
- Step 4 — Brush and preheat (1 minute). Brush the outside of each wrap lightly with melted butter — this is the secret to a golden, crispy exterior. Preheat your air fryer to 375°F (190°C) for 3 minutes.
- Step 5 — Air fry (10–12 minutes total, in batches). Place the wraps seam-side down in the air fryer basket, leaving space between them (don’t crowd — cook in batches of 2 if needed). Air fry at 375°F (190°C) for 5–6 minutes , then flip carefully with tongs and cook for another 4–6 minutes , until the tortilla is golden brown and crisp and the cheese is melted and bubbling. Intensity note: keep the heat moderate — 375°F is the sweet spot. Too hot and the tortilla browns before the cheese melts; too low and the wrap turns soggy instead of crisp.
- Step 6 — Rest and serve (2 minutes). Let the wraps rest for 1–2 minutes before cutting (the filling is molten hot). Slice in half diagonally and serve with ranch or extra hot sauce for dipping.
