Instructions
Step 1: Cook the Pasta (Intensity: Low)
- Bring a large pot of heavily salted water to a rolling boil.
- Add the macaroni and cook for 2 minutes less than the package instructions for al dente . (The pasta will continue to cook in the oven and absorb sauce without getting mushy).
- Drain the pasta, toss with 1 tablespoon of olive oil to prevent sticking, and set aside.
Step 2: Prepare the Zesty Meat Sauce (Intensity: Medium)
- Heat a large skillet over medium-high heat. Add the Italian sausage, breaking it up with a wooden spoon as it cooks.
- Once partially browned (about 4 minutes), add the diced onion and minced garlic. Sauté for another 4–5 minutes until the sausage is cooked through and onions are translucent.
- Stir in the chopped artichoke hearts, dried oregano, dried basil, crushed red pepper flakes, and black pepper.
- Pour in the marinara sauce, turn heat down to low, and simmer for 8–10 minutes to let the flavors meld. Remove from heat.
Step 3: Make the Creamy Cheese Base (Intensity: Medium – Requires Attention)
- In a medium saucepan, melt 3 tablespoons of butter over medium heat.
- Sprinkle in the flour and whisk continuously for 1 to 2 minutes to cook out the raw flour taste (forming a pale roux).
- Slowly pour in the warm milk and heavy cream in a steady stream, whisking constantly to prevent lumps.
- Bring to a gentle simmer and cook for 3–5 minutes until the sauce thickens enough to coat the back of a spoon.
- Reduce heat to low. Whisk in the nutmeg, salt, 2 cups of Sharp White Cheddar, 1 cup of Mozzarella, and ¼ cup of Parmesan until smooth and completely melted.
- Fold the cooked macaroni into this creamy cheese sauce until evenly coated.
Step 4: Assemble the Casserole (Intensity: Low)
- Preheat your oven to 375°F (190°C) . Lightly grease a 9×13-inch baking dish.
- Spread half of the creamy cheese-coated macaroni across the bottom of the dish.
- Layer the entire batch of Zesty Italian Meat Sauce over the pasta layer.
- Top with the remaining cheesy macaroni, spreading it out evenly.
- Sprinkle the remaining ½ cup Mozzarella and ¼ cup Parmesan over the top.
Step 5: Add Topping & Bake (Intensity: High Heat / Low Effort)
- In a small bowl, mix the Panko breadcrumbs, melted butter, Italian seasoning, and chopped fresh parsley. Scatter evenly over the top cheese layer.
- Bake uncovered at 375°F (190°C) for 25 to 30 minutes , or until the edges are bubbling and the breadcrumb topping is deep golden brown.
- Optional: Switch the oven to Broil on HIGH for 1–2 minutes at the end for an extra crisp crust (watch closely to prevent burning!).
Step 6: Rest and Serve
- Remove from the oven and let rest for 10 minutes before serving. This allows the cheeses to set so you can scoop clean portions.
- Garnish with additional fresh basil or parsley and extra grated Parmesan.
